Ingredients

Cutlet mass: in the recipe / I took
minced meat (ideally beef, but you can also mix different types) 114gr / 985gr
wheat bread 23gr / 200gr
milk or water (I have milk) 34gr / 300gr
sautéed onion 15gr / 130gr
salt, black pepper
Sauce:
sour cream 250gr / 250gr
broth, broth, water 750gr / 600gr
wheat flour 75gr / 30gr
tomato puree 100gr / 1st. l. with a slide
butter or margarine (I always use butter) 50gr / -
salt, sugar
flour and vegetable oil for frying meatballs

Cooking method

  • Oooh, that's them !!! Our children don't understand, but we remember everything: they are! Kindergarten meatballs!)))
  • In the recipe I specially wrote the recipe for the Collection and how much I took. The fact is that it is always easier to recalculate from the original source for the amount of minced meat available (it is logical to start from the main ingredient). I just weigh the amount of my minced meat that I have thawed / is in stock and calculate all other products by coefficient. How to calculate - indicated in the note.
  • Meatballs:
  • 1. Make minced meat, if you initially did not have minced meat, but meat.
  • 2. Peel and sauté onions in butter. Necessarily!
  • 3. Pour stale white bread (without crusts) with water or milk. I took milk (for myself, my beloved))). And since I already had minced meat (that is, I did not get the meat grinder), I pounded the nourished bread into porridge with a mudler and added it to the minced meat. The best is wheat bread made from flour of at least 1 grade and 2-3 days old.
  • 4. Season with pepper and salt. Mix well.
  • Yes, there are no eggs. They are not found anywhere in the table cutlets. In zraz there is, in casseroles and meat-based rolls. In cutlets - no!))
  • 5. Form round meatballs, roll in flour and fry in a pan. About the roll. Pour flour into a deep plate (a little), put a meatball in it, turn it over a couple of times, lift and shake it in your palm, with a bent boat and with fingers spread out (slightly spread out). The fact is that flour (or cocoa powder in a potato cake, etc. - principle one - a powdery substance) sticks to a wet meatball with flour pieces and stains. When you shake it, the excess will be poured from it, only the meatball will remain evenly thinly dusted with flour.
  • 6. Put the meatballs in a saucepan, pour over the sauce (it should cover or almost cover the meatballs) and simmer under the lid for 10-15 minutes.
  • Served with crumbly buckwheat, rice, mashed potatoes. The garnish is poured with sauce (not pouring is a crime!)
  • About the sauce.
  • For the amount of ingredients I have taken, you will need about 1 liter of sauce (this is practically the amount that is given in the Recipe Book. Tomato, spicy tomato, sour cream, sour cream and tomato are allowed.
  • 1. Heat flour in a dry frying pan. Cool (otherwise the butter can burn out from a hot frying pan), add butter.
  • 2. Place together in a mixture of sour cream, water / broth / broth and tomato,
  • salt and add sugar, stir well with a whisk and bring to a boil.
  • Please note that I did it my own way, because I was used to it. 100g of tomato puree is a bit too much for me, I just put a tablespoon of tomato paste and see for yourself how orange everything is. Especially. that for meatballs, just sour cream sauce is allowed. I definitely put a little sugar in the tomato-sour cream sauce (for my taste it should be faintly sweetish). I don’t put butter, because I have country fat sour cream and my liver will be tied in a knot))). By the way, about sour cream.Low fat sour cream can be curdled, please note.
  • Good people, it's very tasty. A pronounced taste of a wheat bun, a characteristic texture (yes, it was characteristic, probably due to the significant content of bread!) .... Mur-mur, how happy I am.)))

At the same time, now I will teach you how to recount recipes to fit your needs. Suddenly someone does not know how. I do this all the time, because I really love the recipes of the Soviet public catering. I have a lot of books, but there it is forever either for 5 kg of flour (it's good if, or even for 100 kg, they come across))), then for a portion (some kind of minced dumplings: 146g of meat, 43g of onion ...). And so sit and count.))

So that's it. Equip yourself with a calculator - it greatly simplifies the process.

We take a casserole with raisins, which is 120g of cottage cheese. For example, you have 680g of cottage cheese in the refrigerator and you would put it all in a casserole and attach it. It's simple. Divide YOUR 680gr. for 120g of the RECIPE and get 5.66. This is the factor by which all other ingredients in the RECIPE must be multiplied.
I.e. cottage cheese 680gr
semolina 5.66X10 = 56.6g (rounded to 60g)
sugar 5.66X15 = 84.9g (of course, we round up to 85g)), etc.

If you have fewer products than in the recipe, everything is the same, but your coefficient will simply turn out to be less than one. For example, the recipe contains 4800 g of flour, but you want to take 500 g of flour. Anyway, divide YOUR amount of product by the amount of the RECIPE. 500/4800 = 0.104 is the factor by which you will multiply the rest of the recipe. Mandatory rule: the products that you divide must be in the same amount: both in grams or kilograms, both in liters or milliliters ...

Everything that is indicated for the cutlet mass is mixed into one mass. Bread together with milk / water, sautéed onions are also shaken out into the minced meat (I use little oil, so I don't remove anything, but just put everything out).
