Pear pastille with honey and white wine (in oursson dehydrator)

Ingredients

seasonal pears 1 kg
small lemon 1 PC
white wine 50gr
honey 200gr

Cooking method

  • I didn't peel the pears, I just removed the centers. Cut into small cubes
  • If the lemon is large, then we take only half. Remove the zest and squeeze out the juice. Pour in wine and simmer until pears are soft.
  • Puree with a blender and leave until the mixture cools. Add honey.
  • We cover the pallets with paper. You do not need to lubricate the paper with anything, it then easily separates if you moisten it with water.
  • Pour a mass of about 0.5 to 1 cm thick onto each pallet.
  • We set the temperature to 50 degrees. Dry for about 20-24 hours. The finished marshmallow should be plastic and not stick to your hands.
