Pumpkin Potage

Ingredients

pumpkin 400 g
butter 1 tbsp. l. (15 g)
onion 80 g
broth (or water + bouillon cube) 200 ml
milk 200 ml
cream 3 tbsp. l.
salt pepper taste
crackers for serving optional

Cooking method

  • Peel the pumpkin from skin and seeds. Cut into cubes.
  • Cut the onion into half rings.
  • Heat butter in a heavy-bottomed saucepan. Fry the onion in the same place until slightly golden brown.
  • Add pumpkin to the onion and fry it for another 3 minutes.
  • Cover with water and a cube or broth. Cook over high heat, skimming off the foam. Then, cover, reduce heat and cook for another 10 minutes. over medium heat until the pumpkin is fully cooked (it should be easily pierced with a fork).
  • Once the pumpkin is tender, remove the pan from the heat. Pour the milk over the pumpkin and beat well with a blender in mashed potatoes until smooth.
  • Return soup to heat, add cream, salt, pepper and bring mixture to a boil.
  • Serve with crackers.
