Potato starch + baking powder 60 gr. + 1 tsp. with a slide

Powdered sugar 130 gr.
Vanillin
Margarine (butter) 200 gr.
Cocoa powder 2 tbsp. l.
Ice water (according to the situation) 1-3 st. l.
For the chocolate filling (you can use any other filling):
Cream 32% fat 50 ml.
Cacao butter 24 gr.
Honey 1 tbsp. l. without slide
Carob or cocoa how much will it take

Cooking method

  • We knead the dough. For this, first of all, we have ice water in the refrigerator, egg yolk and margarine, which we just got out of the freezer. In a bowl, combine flour (300 g.), Starch, icing sugar and baking powder. Frozen margarine in three layers alternately on a coarse grater into the bowl of the food processor and sprinkle it with a dry mixture. We grind (do not knead !!) by hand to a state of small crumbs. Then quickly add the yolks and knead the plastic dough. Add water if necessary, but take your time. The dough only appears dry immediately. The margarine melts quickly. This procedure can be done with a special shortcrust dough knife or in a blender bowl. I prefer hand. The dough is slightly sticky.
  • Divide the dough into 2 equal parts. Add cocoa to one of them and knead (trying not to do this for a long time) until a uniform color. We send it to the refrigerator, putting it in a bag. And add 2 tablespoons of flour to the other, knead (also in a hurry) and refrigerate.
  • All this happens very quickly. The dough is allowed to rest for 30 to 40 minutes. During this time we make chocolate.

  • Cool the mass in the refrigerator.
  • Turn on the oven 180 degrees.
  • Take out the dough (which was the first to go to rest) and, having rolled it out with a thin sausage, cut into pieces. There will be about 35-38 pieces. Weight is about 10 grams.
