Cooking method

  • I saw enough of the video of the famous chef Heston Blumenthal and he impressed me so much that I decided to cook the chicken following his method, but cutting it down a little))
  • So:
  • Soak the chicken in a saline solution, a proportion of 1 liter per 60 grams of salt, but I had less salt, about 40 grams.
  • The main thing here is not to overdo it with salt, otherwise the chicken will turn out to be dry.
  • We leave the chicken in solution for a day and during this time it absorbs the right amount of moisture, like a sponge.
  • After 24 hours, take out the chicken, wash it with water, season and sprinkle with oil.
  • I baked in mini oven Steba KB28ECO, and also tested how she handles baking a whole, large chicken.
  • We heat the stove to 230 g / top + bottom mode for 10 minutes.
  • We put the lattice on the lower level and on it a form with chicken.
  • We bake for 65 minutes or, as I installed the temperature probe and waited for the temperature inside the chicken to reach 75 grams.
  • 15 minutes before the end, switch the oven to ver / them + convection mode.
  • Just at the end of the set time, the temperature probe squeaked.
  • We take out and let the chicken cool. It is not necessary to cut hot, as all the juice will begin to flow out of the chicken, and juice does not flow out of the cooled meat.
