Chickpea and eggplant cutlets

Ingredients

chickpea 200 g
eggplant 1 PC
bulb onions 1 PC
tahini 1-2 tbsp. l
lemon juice 1 tbsp. l
cumin ~ 1 tsp
coriander ~ 1 tsp
black pepper
salt

Cooking method

  • Rinse the chickpeas beforehand, add water (for at least 8 hours, you can do more), during this time, rinse several times and change the water.
  • Bake whole eggplant on the grill or in the oven until soft. Peel and cut into cubes.
  • Pass the prepared chickpeas (it has greatly increased in size and became quite soft) through a meat grinder, alternately adding slices of eggplant and chopped onions.
  • The mass should be as homogeneous as possible.
  • Add spices and lemon juice, season with salt to taste.
  • Mix everything well.
  • Form cutlets from the mass with wet hands and fry over medium heat until golden brown.
  • You can also serve baked red pepper sauce with the cutlets.

Olga, you understood correctly, you do not need to boil chickpeas beforehand. The cutlets are fried normally. The main thing is long soaking and good chopping with a meat grinder (you can scroll twice), you should get a uniform mass like mashed potatoes. A blender won't grind like that.
The sauce recipe is very simple. Bake the peppers in the oven, peel, grind in a blender (no need to puree until smooth, you can use slices), add soy sauce, pepper and a little honey.
