Carrot cake "For the Tumanchik"

Carrot Cake For Mist

Ingredients

Carrots (net weight) 150 gr.
Corn flour 0.5 tbsp.
Wheat flour 1.5 tbsp.
Eggs (SB) 2 pcs.
Sugar 1 tbsp.
Kefir 1 tbsp.
Vegetable oil 100 ml.
Baking powder 2 tsp
or soda 3/4 tsp
Vanillin* on the tip of a knife
Prunes ** 100-150 gr.
Glass 250 ml.

Cooking method

  • Grate the carrots on a fine grater. Soak prunes in hot water until soft, cut into small pieces. Mix both types of flour, vanillin (or other spices) and baking powder, sift. Beat eggs with sugar at high speed until the mass increases by 3-4 times. Continuing to beat, pour in kefir and vegetable oil in a thin stream. Gently stir in grated carrots and chopped prunes. Add flour gradually. The thickness of the dough is about the same as for pancakes. Lightly grease the mold (I have 26 cm), pour out the dough, smooth. Bake in a preheated oven at 180-200 Cabout 30-35 minutes before dry match.

Note

* you can also add cinnamon, nutmeg or lemon zest

I had to make changes: the prunes were not at home, they replaced them with raisins and dried apricots. For flavor, I added finely chopped lemon slice, vanilla sugar and a pinch of nutmeg.
The cake has risen well, browned, exuding a funky aroma!
The sample was taken directly from a hot pie. In general, very tasty))) From personal feelings: it seemed to me that the vegetable oil could have been put in less (its taste is a little stronger than I would like). I'll see what my family will say in the evening)))
