Part Jerusalem artichoke includes: pectins, sugars, mineral salts (silicon, potassium, iron and zinc), proteins, amino acids and many vitamins. Jerusalem artichoke contains inulin, a substance so necessary for those who suffer from diabetes. There is evidence that regular consumption of Jerusalem artichoke over a long period of time lowers blood sugar levels. These properties make it essential for both those who already have diabetes mellitus and those who are susceptible to this disease and at risk of getting sick. In addition to the benefits for diabetics, the beneficial properties of Jerusalem artichoke have a positive effect on the human digestive system. This has been proven by many independent studies and experiments. The inulin contained in Jerusalem artichoke helps to eliminate many toxic substances from the body. With food and during digestion, a lot of ballast substances enter the intestines, which inulin binds and eliminates. Inulin promotes more vigorous activity of the gastrointestinal tract and stimulates choleretic activity. The use of Jerusalem artichoke contributes to the fact that the body becomes more resistant to all kinds of infections and viruses that affect the digestive organs. Its beneficial substances prevent all kinds of pathogenic bacteria and parasites from entering the body. In addition, Jerusalem artichoke promotes the formation of normal microflora in the intestines, creating all the necessary conditions for this. It is thanks to this that it is indispensable for those who suffer from dysbiosis. Jerusalem artichoke is useful for mucous membranes, as it stimulates their blood supply. They are used as an aid in the treatment of stomach ulcers, diseases of the duodenum, duodenitis, colitis, gastritis, enteritis, pancreatitis, heartburn, diarrhea and constipation. Jerusalem artichoke stops vomiting, relieves nausea, relieves heartburn and bitter taste in the mouth, eliminates pain and bloating. Jerusalem artichoke helps faster absorption of selenium, despite the fact that it is not included in its composition. Jerusalem artichoke is recommended to be regularly consumed by people who live in cities with a poor ecological environment, because it helps to remove salts of heavy metals from the body.
It is known that the composition peanuts are substances polyphenols. In structure, they are similar to antioxidants, and the latter, in turn, act in the body as a protector of cells from the effects of dangerous free radicals. Moreover, supporters of the opinion that roasted peanuts are more harmful than usual are deeply mistaken. When peanuts are fried, even more polyphenols are produced in it, which means that its beneficial qualities on the body only increase. Also, the benefits of peanuts have a beneficial effect on immunity, especially during viral and colds epidemics. In addition, it has a pronounced positive effect on the female body during menopause. However, it should be noted that peanuts contain substances that increase blood clotting, which must be taken into account for people with increased clotting.

It remains only to get some tapinambur,
And I have a bunch of them, like potatoes. They planted about 3 years ago, it grows by itself and reproduces. We dig in in spring and autumn, 7-8 kilograms. We leave the rest for reproduction. And flowers in our tea.

Well, why did you wear it out? It grows by itself, does not require care, it multiplies itself, it blooms beautifully, in April instead of fresh potatoes it comes, healthy ...
MariV
This year, in the fall, I have just gigantic tubers! But I like early spring, autumn is not so tasty, dryish.
Linadoc
Olga, here in "pilaf" this dryness is not felt. Simply tasty, satisfying and healthy.
MariV
Nope, for the second day I eat Jerusalem artichoke - yesterday pancakes, today I baked with cheese. Tasty in the spring.
lungwort
Girls, and I once tried Jerusalem artichoke and no more. It tastes like smelly poliet. packages.
Bishka

Lin, as you can see - yesterday I dug up a bucket and a half of Jerusalem artichoke, and here you are with food! And again, for myself, my beloved, I'll cook it - my husband has the same phenomena as mentioned above ... And the peanuts from childhood, accustomed to cracking raw - did not have time to fry, the child ate everything before.

There are foods that the person does not like the taste of, no matter how they cook them. This is completely normal. It is not for nothing that they say: "There is no comrade for the taste and color!" There is no need to convince a person to eat something for which he has idiosyncrasy.

This is what my people eat is a salad - Jerusalem artichoke, daikon, carrots, herbs, onions, sometimes an apple. I fill it either with oil - more often, or with mayonnaise in half with butter.
Lin, that's how I'll bring Brand from the dacha, I'll cook it right away. Just the seams will be removed ...

Well, the time has come when everything coincided - there is no food in the house, and a bucket of Jerusalem artichoke, if not more, and the multicooker has arrived. True, once again they have choked all the nuts ... Tomorrow I will cook for lunch, then I will report.
Linadoc
Yeah, I'm waiting for the report.

Lina, I cooked the food, as always, based on ... I added mushrooms and ... forgot the apples on the table. I turn around - they are lying, and the cartoon is already puffing. In short, no one understood anything - it's me about the composition, they ate it and said a big thank you.Daughter finally finally did not understand that this is rice. From all of you thanks! And apart from Jerusalem artichoke, which now will not die in the trash bin, wilted prematurely, but will go to work.
PySy. And I really liked it!
An4utka

lungwort, and you ate it unpeeled? The other day I baked in the oven like potatoes - whole tubers in vegetable oil and under foil, then I took off the skin - it turned out to be so tasty, tender, slightly sweet, some even exquisite. Baked fish begged for him.
Linadoc
Veronica, well, thank God that everyone is happy!
An4utka, cook with pleasure!
paramed1
An4utka, but my niece first tried Jerusalem artichoke a week ago, raw, and said that peeled looks like radishes, and unpeeled - like seeds. So who likes what. For me - anyway! Many people do not like it in any form, no matter how they dance ...
An4utka
paramed1, but what can I say there, it also happens that a person first hates something, and then begins to love, or vice versa)
