Sweet potato cream soup with sun-dried tomatoes and cheese

Ingredients

sweet potato 700 gram
carrot 200 grams
cream 150 grams
fresh or dried paprika 100g
cheese 100g
sun-dried tomatoes 6 items
spices and herbs taste

Cooking method

  • We take vegetables, spices, cream, cheese, and sun-dried tomatoes.
  • Sweet potato cream soup with sun-dried tomatoes and cheese
  • Peel the sweet potatoes and carrots.
  • Cut into large pieces and send to simmer (I cooked in a Dex-60 multicooker) for 10-15 minutes in slightly salted water.
  • Pour the cooked sweet potato with carrots and part of the broth with a ladle into a blender bowl or a small saucepan,
  • add half a clove of garlic (optional), grated cheese or in a blender, cream, paprika. Salt and
  • purée with a hand blender for 10 seconds.
  • Pour into portioned plates, add sun-dried tomatoes cut into pieces, garnish with herbs on top.
  • Serve with croutons or toast.
  • Bon Appetit!

But it is the slices of tomatoes in cream soup that make it possible to enjoy the unusual sweet and sour aroma,
which "suddenly" out of nowhere - opens up in your mouth.

This sweet potato grew in my garden.
Today I dug the first 2 bushes,
and received about 3 kg of vegetables.
There are no particular difficulties in growing it. The first time we watered it, because it grew next to cucumbers,
and later, in August-September, we did not water it at all. The sweet potato is very deeply rooted and has enough moisture.
Unlike potatoes, or pumpkins (the closest "relatives" of sweet potatoes), its leaves are still green and juicy, babat has no sluggishness or drying out, like potato stalks.
The main thing is that sweet potatoes do not like frosts and low temperatures very much.
Therefore, we plant sweet potato seedlings only in late May-early June, after the onset of the warm season, without low night temperatures.

The first option is simpler, because you take a plant straight from the garden and almost every shoot has a "sleeping bud" from which, if you put it in water, roots will start to grow in a week.
And they say it is a little more difficult to make seedlings from "batatina", but I myself have not made it from sweet potatoes yet.

because it is an African plant and loves high temperatures, heat, and the duration of growth in the garden at a temperature of 25-35 degrees is about 5 months. Then the fruits have time to form and grow large.
I had 2 bushes weighing 200-300 grams, and there were up to 800 grams. And there were other types of embryos that could still grow,
but already the night frosts began with us - and we had to choose them.

you have an interesting sweet potato. Ours has an orange pulp (from light orange to almost red) and a dark orange skin. sometimes the skin is red. and I have never seen such a white-purple one as yours. I wonder if they are different or not.

And, unfortunately, I have not tried the orange sweet potato, so I can only guess and read the descriptions on the sweet potato breeding forums.
They write there that the taste is different, of course. Some are sweeter
some are more neutral. But in general, something between potatoes and pumpkin tastes, as for me.
