Cooking method

  • It turned out so delicious that I could not resist and decided to share the recipe with you right away. Yes, and I myself have already eaten 2 buns, although I cannot (I hope the baby's stomach will forgive me for my incontinence)
  • In general, everything is very simple.
  • Pour juice into the bowl, 2 tbsp. l. flour, spices and yeast, mix everything with a flexi spatula, turning on the heating at about 37-39 degrees, when the temperature is reached, turn off the kneader and wait for light bubbles to appear.
  • At this time, lightly fry the garlic cloves, peeled and cut into 2-4 pieces, in vegetable oil. take out the garlic, pour the oil into some container and add olive oil, so that 50 g comes out together
  • (I put 50g of butter on the stove, after pouring it into a mug, it turned out 40g, therefore it costs 40-50g, and 10-15g will suddenly be lost somewhere too).
  • Sift the flour with salt.
  • We cut the tomatoes into small pieces, rub the cheese (if not already grated) (in fact, I had an ordinary sur, which was simply melted in a bun, so it's all the same to grate it, but you can also use hard cheese, then, perhaps, it will be visible in the finished product). We mix cheese with tomatoes.
  • When our yeast in tomato juice began to ferment a little, then (leaving the flexi mixer for now) turn on the machine (heating about 35 degrees) and add 1/3 of the flour, turn on the speed for a minute, increase to 2. and knead for 30 seconds (maybe this and not necessarily, but I did this to break the lumps faster). Then we remove the nozzle and put the hook nozzle, and already knead the dough in the usual mode, gradually adding all the flour. Periodically with a spatula removed from the walls and bottom. At the end, leaving a little flour in a bowl, pour out the butter, mix with butter, wait for everything to interfere, add the tomatoes with cheese, knead again, the dough will be a little sticky, if it's too sticky, then you need to add the rest of the flour. and knead well again. Remove the hook (we no longer need it). put a splash protection and cover with a towel. let the dough sit for 1.5 hours, doing a warm-up every half an hour.
  • When the dough has moved away, we take it out onto a floured table, knead it slightly so that it stops sticking (do not overdo it, do not make it completely dry) and then divide it into 60g pieces, I got 10 pieces.
  • roll into balls and put on a baking sheet, let it stand for another 30 minutes.
  • Lubricate our buns with a scrambled egg and a little water and sprinkle with sesame seeds.
  • We heat the oven to 200g.
  • We put the baking sheet in the oven and reduce the temperature to 180 degrees. bake for 25-30 minutes. (I had them at 180 degrees, after 20 minutes they were still completely light, I baked another 7 minutes at 200g, I think maybe if I immediately put 190 and for 20 minutes it would be what I needed)

My sun-dried tomatoes are dry without oil, I think if you have them in oil, then you can use tomato oil instead of olive oil. (Sorry for the tautology)

I also think the heating function in the kneader in this recipe is just as extra. A convenient option, if this is not the case, then it is quite possible to heat the juice in the usual way, or to mix it in the same bread maker.
