Ingredients

horseradish roots 300g
greens (parsley, mint, basil, spinach, dill, cilantro) 200g
sugar 2 tbsp. l.
salt 1 tsp
lemon zest and juice 1 PC
vinegar 9% 2 tbsp. l.
water 200ml

Cooking method

  • A simple recipe for fragrant and beautiful horseradish. Wash the horseradish roots thoroughly with a stiff brush and clean. Rinse the greens well. For a beautiful green color, it is advisable to take a little spinach, and for taste and aroma it is good to take quite a lot of mint, cilantro and basil. But parsley and dill give both color and aroma. Scroll horseradish and herbs through a meat grinder through a wire rack with a fine mesh. To reduce lacrimation, you need to put a bag on the mouth of the meat grinder. You can break everything in a powerful kitchen processor or blender (then chop the horseradish and greens beforehand). Grate the lemon zest on a fine grater and squeeze the juice. Add to horseradish with herbs, add sugar, salt, vinegar and cool water there. It is good to whip everything up with a blender or processor, put it in sterilized jars. Cover the jars with lids. Sterilize 0.25L cans in boiling water for 10 minutes, 0.5L for 15 minutes. Close the cans tightly.
