Caramelized Beetroot Salad with Mozzarella

Ingredients

Young beets or just small 1 PC.
Onion salad 1 PC.
Mozzarella 130 g
Rosemary 1 tsp
Black peppercorns 1 tsp
Balsamic vinegar 1 tbsp. l.
Sugar 1 tbsp. l.
Water 1/8 cup
Salt, olive oil taste

Cooking method

  • Boil or bake beets, as you like more. I baked in the microwave.
  • Peel the onion, cut into thin half rings. Scald quickly with boiling water and immediately immerse in ice water. Put in the refrigerator for the maximum possible time (about an hour or less, if there is no way to wait for an hour) - this will discourage bitterness, but the onion will remain crispy.
  • Cut the beets into slices or cubes as you like.
  • Put in a frying pan, add sugar, vinegar, water. Simmer with constant stirring until the liquid has completely evaporated. Cool down. Season with salt and pepper with freshly ground pepper.
  • Throw the onion in a colander, drain the water.
  • We collect the salad:
  • put the onion on a large plate. Gently place the caramelized beets on top of it. Arrange the mozzarella balls or slices on top. Season with more salt, sprinkle with black pepper. Sprinkle with a couple of drops of vinegar or lemon juice, sprinkle with olive or any other oil.

Girls! And the boys. It is so delicious !!! Itself did not expect. Grind it straight for dinner for three. Everyone liked it, and my mother, although she is elderly and rural, loves simple food, and give her husband more and more meat. Actually, he did it with meat and ate it with tagine chicken.
Delight and rapture! A very light dish, quite self-sufficient for both breakfast and light dinner. It goes well with young wine. For my taste, red, tart.
