Ingredients

Roasting:
Meat with fat (pulp) 1 kg
Bulb onions 500 g
Fresh garlic 7-8 teeth
Vegetable oil 120 ml
Tomato paste 25% 3-4 tbsp. l.
Black or a mixture of peppers and salt taste
Zira 1 tsp
Dough:
Flour (I have Makfa) 600 g
Eggs CO 6 pcs
Vegetable oil 1 tbsp. l.
Salt 1 tsp
Omelet:
Eggs 3 pcs
Salt pepper by a pinch

Cooking method

  • In Uzbekistan, along with such popular dishes as pilaf, manti, lagman, kaurma lagman (that is, fried) is also prepared.
  • Қovurma - literally translated as "frying", which means our lagman will be without gravy.
  • Oddly enough, but this uncomplicated dish, with a small amount of ingredients, makes you fall in love immediately and irrevocably. The main thing is to cook it correctly, and then you will get the "very" authentic taste that many simply adore, including me.
  • Not the presence of lamb, dumba, cottonseed oil in this dish or, God forbid, drawn noodles with your own hands, makes your "kaurma" (as I will call this lagman in the future) real. There are only a couple of subtleties, the observance of which will give you the expected result, having on hand the simplest and most familiar ingredients: first, do not spare oil for your lagman; second - the tomato paste must be fried in the most thorough way (but not allowed to burn, really); and third - never use purchased pasta such as spaghetti, linguini and others for this dish (Uzbek purchased lagman does not count). Just don't even start cooking kaurma then, because you still get only pasta with meat, and not lagman at all. You'd better pick your favorite noodle recipe, or use mine.
  • So, first of all, you need to knead the dough so that it has time to stand for half an hour while the meat and other ingredients are cut.
  • We choose the meat according to our taste, but not lean, it will be dry. This time I cut it from beef ribs, here it is moderately greasy, with juicy veins ... um ... It turned out very tasty.
  • Next, we cut it into pieces of 2.5-3 cm. You don't need to grind it too much. We spread the meat in a cold cauldron, into which oil has already been poured:

  • My beef couldn't just be fried, it would have been tough. Therefore, I first had to stew it in its own juice under the lid for 30 minutes (if you have soft, quickly cooked meat, such as beef neck, sirloin edge, as well as lamb or even pork shoulder, then first fry the onion until it is light golden, and then add and fry the meat).
  • While the meat is stewing, we roll our dough and cut the noodles (in the note I will write how I made it).
  • After half an hour, we open our cauldron, add fire and fry the meat until slightly golden brown. Then add the onion, not thinly chopped in half rings, and as soon as it starts to turn golden, put the garlic chopped into slices into the cauldron, and also add preferably freshly ground pepper and cumin. And do not forget to add salt. We continue to fry, in anticipation of a beautiful "tan":

  • Now we send tomato paste to the cauldron and, stirring often, fry it properly until a very, very tasty fried aroma appears.
  • Here's what a bright fry we got:

  • If you didn't manage to handle the noodles while the meat was being cooked, just turn off the heat under the cauldron, let the frying stand, waiting for its finest hour.
  • Our noodles are already ready:

  • We send it to cook (do not overcook it, it should be ready, but elastic), and in the meantime we are preparing a thin omelet.I do this in a small skillet, pouring in one egg at a time, pre-beaten and mixed with salt and pepper. You can make one large omelet, but the small ones are easier to turn over:

  • Let the omelettes cool and cut into short strips.
  • So, we boiled the noodles, threw them in a colander and let them drain. Now we turn on the fire under the cauldron, send the noodles into it and mix thoroughly. Throw an omelet there and fry everything together for several minutes. In fact, we just heat up the whole mass, but on high heat it has time to brown a little.
  • That's it, our lagman is ready!

  • P.S. Yes, I almost forgot, please don't pay attention to the amount of ingredients. It's just that when it comes to kaurma, I completely lose my head, and it always seems to me that it will not be enough. So I drive in more and more.

Note

Lagman is a rather plump noodles, not wide, but plump. Therefore, the dough does not need to be rolled thinly.
My noodle cutter is only 6 divisions thick, where 6 is the "thickest" one. Kata: 6-3-3. You can also 6-4-3. I cut, as you might have guessed, on an insert with narrow cutters.
Such noodles, in theory, should be square in cross-section, but, to my delight, they are almost round, which means, well, very much like a real lagman.
And lastly, you don't need to make the noodles too long, 10-12 cm is quite enough, maximum 15, otherwise it will be very difficult to mix frying with meat into it.
I somehow forgot myself and made a long lagman ... mamadaragaya! ... I thought my hand would fall off while I was wielding a slotted spoon in a cauldron, trying to connect the incompatible ...
