Stewed potatoes with red onion and pumpkin sauce

Ingredients

potatoes
carrot
onion
pumpkin
sunflower oil
butter
cream 12%
salt, pepper and other favorite spices

Cooking method

  • Peel all vegetables. Cut the potatoes into quarters, grate the carrots on a fine grater. Pour a little sunflower oil on the bottom of the duck, put carrots and potatoes. Season with salt, pepper and add two tablespoons of butter.
  • Put it all out over low heat, sometimes shaking everything so that it is well saturated. When the potatoes are ready, transfer them to a plate, and cut the onion and pumpkin into rings on the bottom of the duck, add a little cream, salt and pepper and simmer for a few minutes under the crish. Mash the pumpkin with a potato crush or blender. And pour this over the potatoes. Add fresh vegetables and herbs, it will be delicious.

Very simple and delicious. I think you can add meat to the potatoes, or vary with other ingredients, to which the eye falls. Probably difficult to spoil.

I liked it in combination with onions: sweet pumpkin and hotness from onions + salt and pepper. This beat the lunchtime impromptu.
