Cabbage salad with apple and plum

Ingredients

cabbage 1 kg
carrot 50g
apples 200g
plums 200g
Bell pepper 100g
onion 100g
greens (dill, parsley, celery, mint) 100-150g
sugar 150g
salt 50g
vinegar 9% 350ml

Cooking method

  • Rinse the vegetables and fruits, chop the cabbage, grate the carrots, cut the apples into small slices (remove the core), divide the plum into halves (remove the pit), finely chop the pepper, herbs and onion. Add salt and sugar to the mixture, mix everything gently and leave to give juice for an hour or two. Put 1 bay leaf, 2-3 peas of allspice in sterilized jars and pour over 1/4 of the boiling pour, prepared for 1 liter of boiling water, 350 ml of vinegar. Put the vegetable mixture tightly into the jars so that the liquid covers the vegetables. Do not pour the fill. Sterilize half-liter cans for 15 minutes, liter cans for 20 minutes (or in a multicooker-pressure cooker at T = 115 * 5 and 7 minutes, respectively).

Fantik
Oh, I beg your pardon, I forgot what you can call "you")))
Anatolyevna

Chamomile
What a salad !! Everything except apples. We don't have them this year. But you can buy for such a salad. I will definitely do it. In winter, I have a report. And how many jars are obtained from this quantity?
Linadoc

Kitty, I tried to quickly.

Yes, Ol, juicy, fast and tasty.

Antonina, Tonya, do it tastefully!

Luda, you are like me!

And how many jars are obtained from this quantity?
Olga, so I went and counted - 5 liter jars, but I had 2 kg of cabbage (with a stump).
Fantik
Lina, if you sterilize in the oven, set the temperature to 120 or 90 (I'm afraid that everything will cook at 120)? So far I have learned to sterilize only empty cans in the oven - thanks to the forum. And add time, adjusted for air and the absence of water, as a conductor of temperature? Will they have time to warm up inside in 15 minutes? I'll have half a liter. Lina, sorry to bother you!
Linadoc
Quote: Fantik
if sterilized in the oven, set the temperature to 120 or 90
At 90 * C, half a liter for 15-20 minutes.
Fantik
Lina, thank you very much! I promise the result with the photo.
Anatolyevna
Linadoc, Lin, I understand correctly, first you pour the filling into the jar, then the cabbage (salad), and the juice from the vegetables where
I also asked apples. I wanted to do it in the evening. I don't understand the current, you don't pour the pouring into the salad, you just pour it into the jar.
I have cans of 0.6 or 0.7 (who calls them what) and liters. How much to sterilize? It is possible in a micro, then how long?
So many questions!
Linadoc
Quote: Anatolyevna
and where the juice from vegetables
Cabbage along with juice, and brine at the beginning, so that the exact amount of marinade in the jar is.
Quote: Anatolyevna
How much to sterilize?
0.6 and 0.7 l cans in a micron for 4 minutes, in water at a boil for 15 minutes, at 90 * s for 20 minutes.
Anatolyevna
Linadoc, Thanks Linochka stopishayat once explained everything in a way. Now everything is clear!
Borisyonok
Linadoc, Linochka!
Thanks for the delicious recipe.
I made two servings today, it turned out 6 cans of 0.7 each
"Ma-lo-va something will be!"
But for some reason I still have a lot of pickle with vinegar ...
I want to make 3-4 portions at once tomorrow.
Linadoc
Elena, Kitty, did you exactly fill 1/4 of the marinade can? It is important. You need just so much marinade and you can't pour it!
Borisyonok
Linochka ... well YES! For 2 servings I made 700 ml of vinegar + 2 liters of water = 2700, it turned out 6 cans of 0.7, and I used 1.5 liters of brine (and according to the norm it should have taken a little more than 1 liter).
Maybe I miscalculated something?
Linadoc
Look, 1/4 of 0.7 * 6 = 1.05 liters of brine should have gone. Make a conclusion. So you got it tight. The double rate should be distributed over 8.5 x 0.7 cans.

And what? .... will explode now?
It turns out that he (lettuce, that is) should swim there? ... but I certainly didn't push hard, but ...
Linadoc
No, it won't explode, but the taste will not be enough.
Borisyonok
Linadoc, Lina.
I report "on the work on the errors"! I scooped up two portions again, boiled brine according to the recipe. The brine was poured with a measure, 175-180g each. for 700g. jar. It turned out today 8 jars. Now boom wait for winter.
Fantik
I also made this salad yesterday. There was somehow little juice in the cabbage. The marinade was also lacking to the top (if not stuffed tightly). I don't know how it will stand. I took it out of the oven with my hands, some jars were not too hot. 20 minutes at 90 degrees - 0.5 and 0.6 liter cans. Here from the multicooker I burned myself with a jar (for a couple of 15 minutes). From a double portion, 8 cans (0.6 and 0.5) turned out, but one in the multicooker left its bottom ... ((((((((((Total 7.

Cabbage salad with apple and plum
I will unsubscribe in the winter how it will stand.
Linadoc
Anastasia, in you poured brine on 1/4? If you do everything according to the recipe, then a little brine remains.
Fantik
Linadoc, Lina, yes, I meant that you fill in 1/4 of the can, put the cabbage there, and the cabbage on top remains dry, not covered with anything. I was not very good yesterday. chorus. was, so I did not think how to deal with it. I poured a couple of cans with marinade reluctantly, because the marinade is very vinegar for my taste. I'm afraid that the salad added over the norm will also turn out to be over-acetic ... And some of the cans are so dry on top and rolled up, radish. Well, it will be "damn lumpy" - then fate ...))) I will not be upset. After all, this is an experience - the son of difficult mistakes ...))
And of course there was a lot of marinade in the pan, I made 2l + 700 vinegar.
Fantik
Lina, I’m thinking that I’ll repeat it when I have strength and desire. Yesterday I threw a bowl of a multicooker with a broken bottom of a can and a spilled salad in the bathroom (I had no strength). And today I started washing, tried the cabbage, so delicious! And the vinegar smell became pleasant, drooling.)
Fantik
Lina, after sterilization or the next day, do parsley and other ingredients change their color to "boiled"?
Linadoc
Quote: Fantik
And of course there is a lot of marinade in the pan
Nastya, everything is accurately measured and tested, it must be clear.
Quote: Fantik
I tried the cabbage, so yummy!
Well, I said that everything has been tested!
Quote: Fantik
Do you have parsley and other ingredients after sterilization or the next day change their color to "boiled"?
Essentially! But there's nothing you can do about it.
Fantik
Lina, so in the recipe only the proportion of the marinade is given - 350 ml of vinegar per liter of water. And I like to make marinade with a margin, so I took 2 liters of water. And vinegar 700ml. Here the marinade remained.

Oh no, not like that. I did a double portion of cabbage. 2kg ... So there shouldn't have been a marinade left ??? Completely confused. Then I'll think it over. I drew a quarter directly on the cans with a marker. We couldn't be wrong with the marinade. How long did I cook it?))
Linadoc
Anastasia, I make the marinade by eye (like "this should be enough"), but I pour exactly a quarter of the container into the jars. All OK
Anatolyevna
Linadoc, Lin made such a cabbage. (For trial). Like it, I will always do it. It turned out 5 half-liter and 2 0.7 jars of salad. I didn't roll up one jar, to be eaten.
Linadoc

to be devoured
Tonya, that's right! Kaneshna NADA try!
Fantik
I did it a second time. Everything worked out!

Cabbage salad with apple and plum
PS. This is a double serving - for 2 kg of cabbage
Linadoc
Anastasia, the beauty ! I see the familiar girlish grapes in the background. I have them all over the house. It's a pity that the tea is not tasty.
Fantik
Lina, thanks.
It is convenient to decorate with girlish grapes. It does not freeze.
And for tea, you can plant Amur grapes and its varieties. It has Isabella-flavored berries. And if he likes the place, then he will also be a monster, like a girlish one. Plus the leaves and berries are edible. And he contracted a fungus with me, you need to look for a place on the site that he likes ...
Trishka
Linadoc, what a tempting salad, I never ate or cook this, I took it to!
Thank you !

Tell me pzhl. who is sterilized in the oven, how's that? It is possible for a teapot in more detail, eh?
Heat the oven to what temperature? And then put the jars with salad, or cold?
It's not Liu to sterilize, so I skip a lot of recipes ...
Linadoc
Ksyusha, it is better then just in boiling water, simply.
Trishka
Yes, this is understandable, but because of this fuss with pots and boiling water I wanted to know about the oven!
Anatolyevna
Trishka, I did in the water, ok. I would like to try! I will still do a little less vinegar.
Lin, can I have an apple? I love him more.
Linadoc
Tonya, you can do anything, I also pour less vinegar, but for everyone the official recipe, proven, you never know. I honestly replace half of the vinegar with citric acid.
Fantik
Trishka, I have the batch above in the photo - I sterilized half-liter jars in a small tabletop oven. It heats up quickly. I put it in a cold one (well, it was not entirely cold. I sterilized empty jars in it before). I turn on 90 degrees and 20 minutes. After the end signal, I take it out and roll it up.
Fantik
A liter in a saucepan with water, and 0.7 got into the microwave.
Trishka
Fantik, Nastyush, thank you
Linadoc
And I'm all in Shteba, 4 x 0.5 or 3 x 0.7 fit at a time. Fast and easy. And in the micra there are 2 cans of 0.7, but lying down.
Fantik
Linadoc, lying, does it mean that they are already completely twisted? Is three minutes enough for 0.7? My marinade, half-screwed in for three minutes, ran out onto a plate. I thought it meant boiling ...
Linadoc
Quote: Fantik
does it mean that it is already completely swirled?
Yes, definitely. But this is the first time I do it, I still prefer the old-fashioned way - in boiling water or in a pressure cooker.
Fantik
Linadoc, Lina, thanks, I'll think about it. I still prefer the old fashioned way.
Irina.A
Linadoc, a good recipe, but without plums you can? (I just don't have them at the moment, although there is a store)
Linadoc
Quote: Irina. A
can you do without draining?
Without plums, you can, but without an apple! You will see how the apple adds flavor!
Irina.A
Apples are indispensable, without them in any way, I really love this combination and just everything is available (except for plums) Tomorrow I will try, if nothing interferes
