Ingredients

Tomatoes net weight 1750 g
Bulgarian pepper 3-4 pcs. large
Bulb onions 3-4 pcs. middle
Salt 10 g
Sugar 175 g
Vinegar 9% 35 g
Ground cinnamon 0.5 tsp with a slide
Carnation 2 pcs.
Ground red pepper 0.3-0.5 h. L

Cooking method

  • Prepare and chop tomatoes, bell peppers and onions, cook for 2 hours over medium heat under a lid. Punch with a blender. Add everything else, cook for another hour without a lid, roll up.

Recipe from SAY7 forums, thanks to author Shony from Rivne. She calls it "Delicious homemade ketchup (and for the Dukan diet)". I have nothing to do with Pierre Dukan, so I did not keep the long author's title; I liked this ketchup with its bright cinnamon taste. And, of course, the need to process your tomatoes - preferably in various ketchups - played a role ...

Suspiciously, it seemed to me such a large amount of sugar for just a few large tomatoes. But, having cooked and tried, I was convinced that everything is in moderation, as I like. But I love sweet ketchup, so if you suddenly start to cook it, it makes sense to put only half of the sugar portion first, taste it, and then add or not add the rest.

Ground red pepper, of course, can be replaced with live bitter pepper.

The color of the finished ketchup due to the cinnamon is darker than usual, despite the fact that more than half of the tomatoes I had were yellow.

Such a cooking time was needed in order to maximize the boiling of the ketchup without the use of a thickener starch.

Yesterday I also made a ketchup recipe like yours, only from 3 kg of tomatoes and without bell pepper. It really turned out very tasty.

In my recipe:
tomatoes 3 kg.
Bulb onions 3 large
200 g sugar
1 tbsp. l. salt
2 tsp ground black pepper
1 tsp cinnamon
8 pcs carnations (crush)
9% vinegar 70 ml.
I cut the tomatoes large enough, cooked for 1, 5 -2 hours. In advance, chop the onion in a chopper and add all the spices to it, except for vinegar to infuse. Pass the tomatoes through a sieve (I didn't have a large sieve, I ground the whole tomato with a blender, and already grinded it as I could through a small sieve, still less, but I came across a tomato skin). Then return the tomatoes to the pan, add the onion with spices and boil a little. (I added a little less onion with spices, because my 3 onions weighed about 700-900g and for my taste the spices were quite spicy). At the end, vinegar was added in 5 minutes. Pour into sterile jars. I got 7 cans of 250g.I took this recipe from Marina on YouTube with my small changes, her channel is called Marina Tvorinki. If anyone will cook according to this recipe, my advice is to torment yourself a little and remove the skin from the tomato in advance.

Elya_lug, no, cinnamon does not go into the eyes and nose, so-so quietly leads the second violin, but the main taste is still in tomatoes, especially with vinegar.

Olgushechka81, thanks, I will make from the following tomatoes, just wipe nothing and I will not pass through a sieve: I am lazy. And the skins - yes, I'll take them off: my tomatoes are all ripe, the skins are easily removed, and the chickens are so happy with them.

Olgushechka81, delicious, delicious, your ketchup !! She peeled the tomatoes, cut them coarsely, put them in a slow cooker, cooked them for an hour in Milk Porridge. I drained the almost transparent juice, added onion with spices, salt and sugar, cooked it for another half hour on the "Porridge" without a valve (I took it out completely). I punched it with a blender, added vinegar; without turning off the multicooker, I rolled it straight from the bowl. From half of the portion I got a liter of delicious ketchup - just the way I love it! Exhibit with a separate recipe - let many see and cook, they will not regret it! Thank you so much.

Bon appetit, I liked it too, I used it both as ketchup and as tomato paste, wherever possible. I will try this week. Only there are no pictures. This year I haven't done it yet.
