Jamie Oliver's Homemade Beans

Ingredients

Red beans 300 g
Garlic 3 tooth
Thyme 3 twigs
Rosemary 1 branch
Bay leaf 3 pcs
Cherry tomatoes 2 pcs
Celery 1 stem
Potatoes (small) 1 PC
Parsley for serving 2 twigs
Salt pepper taste
Olive oil 2 tbsp. l.
Red Wine Vinegar (not used) taste

Cooking method

  • Soak the beans for 12 hours, drain the water.
  • Peel the potatoes.
  • Add unpeeled garlic, thyme, rosemary, bay leaves, celery, tomatoes, potatoes to the beans. Pour in water and boil until the beans are cooked (about 1 hour). Cooking time depends on the type of beans.
  • Then drain the water (leave 1/2 cup). Extract vegetables from beans. Remove the skin from the pomodorians, peel the garlic.
  • Mash potatoes, garlic, tomatoes in a separate bowl with a fork. Add oil, vinegar to the mixture, season to taste.
  • Mix the beans with the vegetable mixture. Add broth if necessary.
  • Serve on toasted white bread slices.

I did it with slight variations, but generally close to the original.
I usually cook a lot of beans at once. I strain the excess, dry it and freeze it. So this time I took the beans from the freezer, slowly thawed them. I cooked vegetables without beans. And without cherry. Instead of cherry, before crushing, I added a spoonful of Jamie's tomato sauce (https://Mcooker-enn.tomathouse.com/in...69796.0), also from freezing.
It turned out to be an unexpectedly tasty tasty dish (honestly - I expected a simpler taste), while very homemade. Serving on toast is good. But even as a side dish or as an independent dish, this beans will definitely take root with me.
