Plum jam

Ingredients

light strong plums 1000 gram
sugar 800 grams
lemon juice 4 tbsp. spoons
sweet wine (white, rose, sherry) 350 ml
ghee 30 grams
star anise (optional) 2 stars
saffron (I have marigolds) 5 petals (1 flower)

Cooking method

  • Remove seeds from the plums. Cut. (I have large plums, cut into 4 parts)
  • Heat the lemon juice.
  • Pour saffron, let it brew.
  • In a bowl with a thick and wide bottom, mix the sugar. wine and lemon juice.
  • Bring to almost a boil so that the sugar is all dissolved.
  • Put the plum, stir and leave for a day.
  • Put on fire, bring to a boil.
  • Simmer over low heat for 45-60 minutes.
  • Add badna stars and ghee 5 minutes before cooking.
  • Stir, let it boil well.
  • Pour into sterile jars. Roll up.
  • Turn the jars, wrap them up and let them cool down.
  • Here's what happens:

The recipe was spied on Karina's forum. I have adapted a little for myself.
It turned out to be a very tasty, aromatic jam with a lot of syrup. I think. that the amount of wine can be reduced if one wants a thicker version. The recipe uses saffron. I replaced it with marigolds (black cutters), which are called local saffron and serve as a substitute for it. I do not know. which gives the oil in the recipe, but the taste turned out to be softer, as for me (I tried it before I put the oil). I will repeat. Recommend.
