Chocolate crackers or a delicious mini barney substitute

Ingredients

wheat flour, higher. grade 200 gr. + on dust
wheat bran 70 gr.
cocoa powder 50 gr.
sugar 140 gr.
salt on the tip of a knife
vanillin on the tip of a knife
opener 1 tsp with a slide
vegetable oil 140 ml.
chicken egg 3 pcs. (130 gr. Without shell)

Cooking method

  • So I did it! I share.
  • Beat the vegetable oil and sugar in a food processor, at this time we mix wheat flour with bran (I only had granules, I had to walk with a rolling pin, but I didn’t crush much, I came across large pieces), add cocoa, vanillin, baking powder. Mix well. Add eggs to the oil mixture one at a time, then gradually, literally 1 spoonful, the dry mixture.
  • You should get this dough Chocolate crackers or a delicious mini barney substitute
  • We send it to 20 in the freezer.
  • After 20 minutes, turn on the oven 1800C + convection, let it warm up.
  • We take out the dough, divide it into 4 parts, leave one part, the rest - in the refrigerator. Roll out the rest of the dough. It is not very convenient to work with (greasy and not very elastic), so we actively use flour both under the dough and on a rolling pin. We roll it out as thin as possible, cut out the figures or simply cut into squares, rhombuses (whatever your heart desires), well, something like this Chocolate crackers or a delicious mini barney substitute
  • and carefully spread it on a baking sheet covered with baking paper (it is better to use a spatula or a wide knife, the dough still crumbles strongly)
  • Cookies are baked for 7 to 10 minutes, depending on the thickness of the dough sheeting. It is quite easy to check readiness - literally a minute before readiness, the cookie looks like this Chocolate crackers or a delicious mini barney substitute
  • the photo shows the boiling oil very well. After a few moments, it will not be visible if you touch the cookie with your finger - it is already quite hard. So that's it - it's time to get it.
  • Chocolate crackers or a delicious mini barney substitute
  • It's fresh out of the oven. We do not remove the cookies from the baking sheet immediately, we wait until it cools down a little and ... you can enjoy! Bon Appetit!!!

Note

For a long time I was tormented, how can I get around without the purchased mini-barney, that I didn't bake - it's not that
And so, about happiness, the son said: "This is better than barney." I'm a happy mom, in spite of the fact that, to be honest, I was "bored" to cut this trifle, and even more densely these cookies came out from me than the barnies themselves

Yaso4ka
Hurrah! The child was pleased - mom is happy! What else does ! Thanks for the recipe, I'll try to make my own)))
V-tina
Yaso4ka, thanks for your attention to the recipe! I'm waiting with a report
Anatolyevna
V-tina, Tina, so important in the bran recipe (you can't find where to buy). The cookies are wonderful!
V-tina
Antonina, Tonya, thanks! In the original recipe, these very barnies contain whole grain flour, it's more affordable for me to buy bran. We have so many of them that our eyes widen - both wheat and rye and a bunch of others with different additives. I try to use them and feed my family more .. Next time I'll try on ground oatmeal, then I'll tell you how it happened
Irina F
Tina, and if you use CZ flour, then replace flour + bran with it?
Thanks for the recipe! Also, all the time in search of a replacement for homemade purchased cookies!
But it’s so hard to please the fussy, they’re like: Tasty, but not like in a store!
Manna
Quote: V-tina
yes, and these cookies came out tighter than the barney themselves
And if some of the eggs are replaced with starch with liquid? Will be friable.
V-tina
Irina F, Ira, we replace bran with whole grain And, of course, this is still not what is in the store .. but my goal was to find a replacement for Barney, so as not to worry about what the child eats, and to put it mildly it is not a cheap pleasure
V-tina
Manna, dear, thanks for the idea, I will definitely try!

I will not give up for anything

Honestly, I already do well with milk or coffee, they go well, you can't eat a lot, quite hearty crackers But if you set the goal to be exactly like a barney, then you need to achieve a lower density of cookies
V-tina
In general, of course, you need to experiment with the composition yet, the thought is this - in the purchased barney there are no eggs or starch in the composition, but they are crumbly ...
maybe it is worth playing with the amount of baking powder and try to do without eggs at all, but this is in the plans, but for now - I finally found a tasty and convenient snack for both the child and myself during the breaks to chew, and even my son said not to cut out any "fintiflyushki", make just rectangles with holes, so that the cooking process will speed up

try to do without eggs at all
I would have done that. They give density to the dough, tighten it.
V-tina

I would have done that.
I'll try)

ABOUT,Tina, you still found this recipe! I'll bookmark it. Did you share the results of the experiments.

Oh, Tina, you still found this recipe!

Natasha! to be honest - I invented it, remembered the principle of making crackers, studied the composition of these barnies and through experiments achieved something similar, now the eggs somehow need to be removed from the recipe ... I honestly tried without them - but somehow it didn't work out yet. . if I think of something - I will tell you
Manna

the eggs must somehow be removed from the recipe.
The eggs in this case hold the dough together and moisten. One egg can be substituted for one (possibly two) tablespoons of starch and one spoonful of water / milk. There will be a bonding and loosening effect. In theory. In practice, this recipe should be tried. You can combine starch and sour cream, but it will be greasy.
V-tina
Mannochka, in Barney's dry breakfast ingredients: wheat flour, wheat flour, sugar, vegetable oils, cocoa, maltodextrin, dextrose, salt, powdered milk, soda, ammonium carbonate, soy lecithin, flavorings, vitamins.
I see the meaning in your words about adding starch to the recipe, and, probably, I'll try to introduce more honey or molasses ..: girl-th: thanks for the hint on how I'm going to bake - I'll try
Manna
They loosen with soda and ammonium carbonate (I think the latter to a greater extent).

Teen, I will wait for your experiments!

ammonium carbonate (I think the latter to a greater extent).
I think so too, and I definitely don't like it

Tinochka, I'll wait for your experiments!
Yes, I would at least now ... but it's very hot here now, and I can hardly stand the heat from 9 in the morning and until 12 at night I don't know what to do with myself. So as soon as there is a desire and opportunity for further experiments, I will tell you what happens
Tumanchik
I take the teenager to bookmarks. Clever, hostess and mommy! What can you not invent for your own rabbits ..
AkhataN
Tina, thank you very much for the recipe, I will definitely try to do it, I think my son will also like it.
Premier
The trick here is ammonia. It loosens the dough and makes the finished biscuits brittle. In this respect, nothing can replace it.
But if instead of eggs you take only yolks (they are replaced by soy lecithin in the recipe), the dough will turn out to be friable than with proteins.
V-tina
Tumanchik, AkhataN, girls, thanks for your attention to the recipe and kind words! I will share the results of experiments
V-tina
Premier, Olya, Thank you! I will look for the best option
marina-mm
Tina, thanks for the delicious recipe. I didn't manage to roll it thinly, I stuck round pieces, baked in a Princess pizza, we liked it.Only no one could tell me what kind of mini barneys they were.
So I got delicious cookies, they don't look like crackers, they are soft inside, but the cookies also rose. ...
V-tina
Marina, soft because they are not very thinly rolled .. this is nonsense, the main thing is that you liked it, eat with pleasure
marina-mm
Tina, so we are happy. Moreover, no one knows how it should be. The dough was very sticky, but I didn't want to hammer with flour. Next time I want to bake in the form of waffles in the grill, there it will roll out itself. Thank you, delicious.
V-tina
Marina, waiting for details about grilled baked goods

TeenHow are you experimenting with eggless dough? Happened? The kids also want something similar to Barney, but homemade ...

got sick of "cutting this little thing
yeah ... well, yes, well, yes, it's really a little inconvenient, especially with a small kitchen table area, which is not uncommon for young people

I will roll thin sausages before putting them in the freezer, and then cut them into thin circles, bake them in the princess and use whole grain flour

Valyusha (pralna?) - for kids
An4utka
V-tina, thanks for the recipe! I made cookies (it was too lazy to roll out) completely from whole grain flour. I usually replace eggs with kefir, this time it was not there, I took whey. It turned out delicious cookies - soft inside, outside with a crispy crust

Trishka
And I'll take it in, thanks for the recipe!
Tinochka, have you experimented with the recipe anymore?
V-tina
izumka, I did it without the egg, but I liked it better with the egg. I tried to replace the egg with a banana, my son liked it, I didn't, but with only the yolks it is very tasty and more crumbly

I have four meters of space for experiments (this is an empty work surface), only I cut the cookies themselves very small so that they are as much like breakfast cereals as possible
Quote: Irsha
and on whole grain flour
yes, the most correct decision, I also switched to it at last
An4utka, (y) not crackers, of course, but very nice that the cookies were pleasant
Ksyusha, I will be glad if I tried a lot of things, but I stopped at this option, including without cocoa, but, if possible, I put some yolks in the dough and flour.
Trishka
Toist instead of eggs - 130 grams of yolks and flour Tsz yes?
And if with wheat, then add bran?
And what about starch?
V-tina

And what about starch?
I tried to replace eggs with diluted starch, I did not like
Trishka
That's it, boom oven!
V-tina
Ksyusha, I'm waiting for impressions
Trishka
Agreed!

Replaced with an egg
V-tina
Olesya, how tangible is the result of the replacement?
