Roasted beetroot carpaccio with rucola, strawberries and cheese chips

Ingredients

Baked beets 1 PC. small
Fresh strawberries 2-3 pcs.
Arugula or young beet leaves handful
Cheese 50 g
Olive oil 1 tbsp. l.
Balsamic vinegar taste

Cooking method

  • Carpaccio is a great snack, especially in demand in summer. Basically, carpaccio can be prepared from many products, since when the word "carpaccio" is mentioned, it is a thin cut. Baked beetroot with strawberries and arugula is absolutely a win-win option, and if you add “fans” of good cheese, the status of the appetizer will increase significantly.
  • Preparation
  • - We bake the beets in foil. I do this in a slow cooker, adding a small amount of water to the bottom. Cool, peel and cut into thinnest slices. We put it on a plate.
  • - We also cut the hard fragrant strawberries into thin slices and spread them in a circle.
  • - The cheese can be scraped with a knife (eg grease) or cut into thin slices and rolled up.
  • - Put the cheese on a plate on top of the beets, add arugula, watercress or young beet leaves. Sprinkle with olive oil and balsamic vinegar. No need to salt. Cheese already brings a salty flavor.
  • - Serve with semi-sweet red wine.
