Curd-fruit soufflé

Ingredients

Apple 1 PC.
Peach 1 PC.
Black currant handful
Cottage cheese 150 g
Egg 1 PC.
Lemon juice 1 tsp
Citrus liqueur 1 tbsp. l.
Sugar 1 tbsp. l.
Vanilla sugar 1 tbsp. l.
Cinnamon 0.5 tsp
Powdered sugar 1 tbsp. l.
Oil sl. for lubrication
Egg white 1 PC.

Cooking method

  • Cut the apple and peach into small cubes, drizzle with lemon juice
  • Curd-fruit soufflé
  • and, mixing with sugar, cinnamon and adding liqueur, boil, bringing to a boil. Remove from heat and add a handful of fresh black currants to the cooled mixture. Beat the cottage cheese with the egg and vanilla sugar and place in greased tins.
  • Curd-fruit soufflé
  • Spread the fruit mixture on top.
  • Curd-fruit soufflé
  • Whisk the protein with powdered sugar into a stiff froth and arrange on top of the fruit mixture in tins.
  • Curd-fruit soufflé
  • Put the soufflé in a slightly preheated (~ up to 140-150about) oven and bake for about 50 minutes.
