Zucchini in peanut sauce with mint

Ingredients

Zucchini 2 pcs
Olive oil 2 tbsp. l.
Walnuts * peeled 50 g
Fresh mint 4 twigs
Cream 10% 80 ml
Hard cheese 50 g
Salt pepper taste

Cooking method

  • Wash the zucchini, dry with a towel and cut in half lengthwise. Cut the halves in half.
  • Heat olive oil in a frying pan, put the zucchini slices, sliced ​​down and fry until golden brown.
  • Grind cheese, mint leaves, nuts in a blender. Be careful not to put the shells with the nuts.
  • * I didn't have walnuts in the village store, but there was a Brazilian nut, oh how !! I used it.
  • Pour the cream into the nut mixture, season to taste and beat again.
  • Put the zucchini on a baking sheet, slices up. Put the mixture on each, spreading it over the entire surface of the zucchini.
  • Cover the baking sheet with foil and bake in an oven preheated to 200C for 20 minutes. Then remove the foil and brown for another 10 minutes.
