Hot peppers marinated and stuffed with soft cheese

Ingredients

Mini peppers, medium hot 13-15 pcs.
Water 500 ml
Vinegar 130 ml
Sugar 2 tbsp. l.
Bay leaf 1 PC.
Carnation 2 pcs.
Salt taste
Allspice 2 pcs.
Young cheese (preferably goat cheese) 200 g
Additives to cheese (pistachio or horseradish pesto, salt, sugar)

Cooking method

  • I propose another great snack for a summer beer party or bachelor party. These peppers pleasantly combine the spicy taste and tenderness of sweet cheese.
  • - Cut off the stalk on the peppers and remove the seeds. Rinse the peppers under cold water.
  • Mix water with vinegar, add sugar, a little salt, bay leaves, cloves, allspice and bring to a boil.
  • - Blanch the peppers in the marinade for 3-5 minutes and, without removing from the marinade, cool.
  • - Put the peppers in a colander and let the marinade drain completely.
  • - Mix the goat cheese with the additives. Season to taste with salt and pepper (sugar).
  • - Fill the peppers with the cheese filling using a pastry bag.
  • - Put the peppers in a clean jar and cover with vegetable oil. Keep refrigerated.
  • For the first time I stuffed the peppers with Almette cheese, then Almette, seasoned with a little horseradish, sugar and salt.

  • Then I used goat cheese, to which I added some herbs, salt and sugar.
  • Since the peppers were not very hot at that time, I added chopped green chili peppers to the marinade. All options are delicious.
  • The author of the recipe I was based on suggests adding pistachio pesto to the cheese.
  • I kept the peppers for 10 days, they did not last longer.
  • Marinade (salt and sugar) made to taste, but should be sweet and sour enough.

Note

Use gloves if the peppers are very hot.
The peppers turned out to be very tasty, almost like the "native" ones that we tasted in Italy and Germany.
