Ingredients

chocolate black 50 g
milk chocolate 50 g
cream 35% 500 ml
chicken egg 4 things.
sugar 150 g
vanilla sugar taste
Cherry juice 100 ml
instant gelatin 1 tsp
lemon acid pinch
walnuts 100 g

Cooking method

  • First, grind the nuts and a small portion of the chocolate. Cover the form with cling film. Place chopped chocolate and half of the nuts at the bottom of the mold.

  • Pour instant gelatin with a small amount of water and let it swell. Bring the cherry juice to a boil and add the gelatin, stir until completely dissolved and let cool.

  • Separate the yolks from the proteins. Beat the whites with 70 g of sugar and a pinch of citric acid until stable peaks.

  • Beat the yolks with 40 g of sugar until the mass starts to turn white. I have homemade eggs with a rich yellow color of the yolks, so my mass did not turn white. Put the whipped yolks to the whites and mix gently.

  • Whisk the cooled cream with the remaining sugar until there are persistent whisk marks on the cream. Add the whipped whites to the egg mass and very carefully, with movements from the bottom up, as if folding, mix the two masses.

  • We spread part of the egg-cream mass on nuts and chocolate, level,
  • Pour chocolate over the entire surface in a thin stream from above, and then use a knife to make stains.

  • Put another layer of creamy egg mass on top, and gelled cherry juice on top. Part of it remains on top, and part falls to the bottom.

  • And we finish with a creamy egg mass. We send the semifredo to the freezer for 8-10 hours, and preferably at night.
