Ingredients

sugar 200 g
flour 200 g
baking powder 1 pack
salt pinch
vanilla sugar 2 tsp
cottage cheese 400 g
yogurt 200 ml
powdered sugar 4 tbsp. l.
Strawberry, raspberry red, black, yellow, currant 800 g
walnuts 150 g
mint for decoration

Cooking method

  • Let's start by making a biscuit. Divide the whites from the yolks. Beat the yolks gradually adding 50 g of sugar and a pinch of salt until a fluffy mass is obtained. Then separately beat the whites with the remaining sugar and vanilla sugar, and also add hot water, beat until stable peaks.
  • Then we mix both masses,

  • add sifted flour with baking powder and gently mix from bottom to top, as if folding so that the masses do not fall off.

  • In a split form, covered with parchment paper, we spread the dough, level it and send it to a preheated oven up to 180 gr. for 30 minutes.

  • While the cake is cooling, we proceed to the preparation of the cream. We take non-fatty cottage cheese and rub it through a sieve, add yogurt and mix with a mixer at low speed. At the end, add the icing sugar and mix again until smooth.

  • Rinse the berries with running water and let the water drain. Grind the walnuts.
  • All ingredients have been prepared and we are starting to assemble the cake.
  • We carefully select the middle of the biscuit cake, leaving the bottom.
