Ingredients

wheat sourdough 100% moisture active 150 grams
serum 200 grams
wheat flour / grade 350 grams
peeled rye flour 50 grams
chickpea flour 5 grams
sugar 1 tbsp. the spoon
wet yeast (dry) 3 (1) gram
salt 9 gram

Cooking method

  • Feed the starter culture before mixing for 5-8 hours.
  • Mix the whey with the sourdough.
  • Mix all types of flour and mix yeast with flour (crumble wet into flour).
  • Add sugar and flour and yeast mixture to the liquid ingredients.
  • Kneading the harvester hook.
  • Add salt after 5 minutes.
  • The total mixing time is 10-12 minutes.

  • Cover with foil and refrigerate. Fermentation takes place there for 10-12 hours.
