Salo of the sky (Tosino de Cielo)

Ingredients

eggs 14 pcs
sugar 0.5KG
water 2 glasses
caramel made from 3 tbsp. l sugar and 1 tbsp. l. water

Cooking method

  • Pala lard is a typical Andalusian dessert, and is best made in wine-growing areas, especially in Jerez or Montilla, since egg white has been and is used to process wine materials, before bottling, to clarify, as coagulants, (precipitants) ... For this reason, a surplus of egg yolks is formed, which are used in pastry shops and monasteries, for the preparation of various desserts as "tallow".
  • Salo of the sky (Tosino de Cielo)Add sugar and water to a ladle, put on fire, stir constantly with a spoon, until the sugar begins to golden. Remove from heat and cool.
Salo of the sky (Tosino de Cielo)There is no consensus in egg recipes. In classic ones, it is recommended to use only egg yolks. But it is believed that it is better to use 10 egg yolks for 4 whole eggs. Beat egg yolks and whole eggs in a cup. Pour the cold syrup into the beaten eggs in a thin stream "into the thread" very slowly and stir until smooth.
Salo of the sky (Tosino de Cielo)Cook caramel and pour it into the bottom of the mold
Salo of the sky (Tosino de Cielo)When the caramel has frozen, pour the egg mixture on top.
Salo of the sky (Tosino de Cielo)Prepare a water bath, pour water into the upper container, put the mold in water, but so that the level does not exceed half the height of the walls of the mold. It is impossible for water to boil between the container and the mold. In the main pot, the water boiled very quietly. Leave on for 45 minutes. We check the readiness with a wooden stick.
Salo of the sky (Tosino de Cielo)According to the recipe, the dessert must be cooled in a mold and then taken out, but I could not get it, the caramel stuck. The second time I took it out as soon as I removed it from the water bath. The dessert turned out to be very dense, with a strong caramel flavor. Delicious.
  • Bon Appetit everyone.

great. Thank you. I'm glad I liked the recipe.
Arka
Interesting thing
With cream, it would have turned out cream-caramel (-brule), but with water ... I can't even imagine how different the taste is
Olya, can you describe the difference?
olgea
Arka, to be honest, I have never done creme brulee. I did it like creme brulee, but there is also cornmeal and lemon juice. If you just compare the consistency, then it turned out softer with milk, again, since there were much fewer eggs in proportion. And something I thought, if you do it with milk, then the syrup should be cooked not in water, but in milk. That is, you get condensed milk. Then it may be easier to beat the eggs just with condensed milk. Oooh, gotta try.

And you get a flan. Only there they also put vanilla.

How many different names and variations. Great. Thank you.

olgea,
Did you do that? This is my favorite instant flip-flop pie (aside from what is made the day before serving).
The principle is the same. Concentrated milk, sugar, eggs - beat everything, pour over caramel.
I did it a couple of times without a test, but it was also great with a test.
There in the comments is my photo of this cake - the last comment. https://Mcooker-enn.tomathouse.com/index.php@option=com_smf&topic=71278.0

I would combine cream catalana, creme brulee, tosino de sielo, flan and other recipes into a common Temko on the forum. With outward simplicity, they look elegant and are eaten by everyone with cries of "more!" There are few exceptions.
