Strawberry jam without cooking

Strawberry jam without cooking

Ingredients

garden strawberry 1:1
sugar 1:1
spatula / spoon - wooden or silicone
enamelled, glass, wooden or plastic containers

Cooking method

  • Summer ... There is a lot of warmth, aroma and taste in this name ... And so you want to stretch out a piece and save all this from it for other seasons ... And there is a solution to this - jam! Yes, not simple, but raw! It is simply indescribably aromatic, tasty and refreshing, as it must be stored in the freezer. Honestly, I don't even know if it can be stored somewhere else - I haven't tried it. But in the freezer, it perfectly retains its taste and does not freeze due to sugar. It just thickens a little.
  • Preparation:
  • Go through the strawberries, rinse (I'm not washing), pinch off the stem.
  • Weigh the strawberries and measure out the same amount of sugar.
  • Place the berry in a non-metallic container, cover with sugar (you can sprinkle it in layers, so the strawberries will juice faster).
  • Leave until the juice appears (I left it overnight) and stir periodically until the grains of sugar dissolve (it took me 3 hours, stirred every 15-20 minutes for 1-2 minutes).
  • It is also advisable to stir with a non-metallic spoon or spatula, so that there is no oxidation and the strawberry retains more vitamins.
  • Next, pour into containers convenient for you and put them in the freezer.

And, of course, this is not any jam. This is an unprecedented miracle !!! It's a pity that our strawberries have already left! .. Next spring ...

This is a great recipe. It is a pity that the strawberries are over, we will have to wait for next year. And what other berries can be made interesting. Will you make raspberries?

So the raspberries will work out? Don't you crush her?
Crochet
Lyudochka, I do not crush the raspberries, I mix very carefully so that the losses are minimal) ...

In the process of mixing raspberries, berries choke quite a lot, of course, but there are enough whole berries !!!

Only I store such jam in the refrigerator ... and put less sugar), per kilo of berries - no more than 800 grams. sugar ...

And in the freezer I store blanks in which there are no more than 300 grams per kilo of berries. sugar ...

kirch
Crochet, Inna, thank you. Yesterday I picked 300 grams of raspberries. Not enough for jam, so I want to do so. In the freezer, I still keep a little crushed and I also put very little sugar

And I! The freezer is not rubber, then I add sugar to taste. Previously, I also did 1: 1 and kept it in x-ke, but it loses both color and aroma. With the change of the farm, new prospects opened up, only now there is not enough space again
By the way, in the vastness of the Internet found some good advice. Sprinkle the strawberries with sugar, drain the syrup, and freeze the rest with a small addition of sugar (I blender)

I store it in the freezer without sugar at all, then I add it if I want. But I cook exactly 300-400 grams of sugar per kilo of berries. I just keep it under the screw cap in the basement.

1: 1 for me is sooooooo sweet, unfortunately ...And with a low sugar content, it will not be stored.

Girls, thank you for your attention and praise ...
Sugar is needed to keep the strawberries from freezing and turning into ice. It is with him that the berry retains practically the same fresh and full of aroma taste !!! ... Right during some blues - you take out a jar from the freezer, gobble up a second spoon and it’s summer in your soul and your body heals!

At the expense of raspberries - I also made 1: 1 and kept in the refrigerator or basement - perfectly retains all the taste properties and does not deteriorate!
The same thing with currants, sea buckthorn (I twist them in a meat grinder).

And I have also been making seaside rose hips for 2 years now (peeling seeds and twisting them with sugar)
Strawberry jam without cooking
(it is so large here - like ranetki), only 1/2 to 1 part of rosehip sugar (you need to try less sugar in strawberries - I'll try to write) ...

The rest of the berries and fruits are either boiled or simply frozen without sugar.

I did not understand where it will not be stored, Tus ?

AnaMost, Anya, thanks for the recipe! A little more strawberries left, you will have to try to make according to your recipe. I usually grind and freeze with a little sugar (strawberries) or no sugar at all (currants, there are a lot of them). Puree freezes in the freezer. But it is so tasty to eat it with a spoon in the winter, still frozen - like strawberry ice cream-sherbet turns out !!! What's interesting about your recipe is that the berry and juice remain soft without freezing.

Crochet,
In the sense of raw with a low sugar content, ferments in the refrigerator.
