Wheat bread with zucchini (sourdough)

Ingredients

wheat sourdough 100% moisture active 150 grams
wheat flour / grade 350 grams
wheat flour, c / z 50 grams
zucchini (zucchini) 100g
sugar (honey) 1 tsp
water*** 105 gram
instant yeast 1 gram
salt 9.5 grams
pumpkin seeds 30 grams

Cooking method

  • Sourdough feed before baking for 5-8 hours.
  • Grate the zucchini (zucchini) on a fine grater. I have them young. I don't clean them.
  • Mix flour with yeast, if you bake on ordinary ones, then take 3 grams.
  • Add water to the leaven, stir.
  • Add sugar (honey), zucchini.
  • Mix with a hook, adding flour and yeast.
  • After kneading for 5 minutes, add salt.
  • The total time is 10 minutes.
  • Stir in the seeds at low speed.
  • Wheat bread with zucchini (sourdough) The dough is soft, not sticky at all. Round and ferment. Fermentation for 1 hour 45 minutes. Stretch-fold the dough 1 time after 45 minutes.

  • We form bread of any shape.
  • Proof for 60 minutes on paper, seam down.
  • Make incisions.
  • We bake in a bowl with a lid or, like me, in a cast-iron pan with a cap.
  • We heat the dishes together with the oven.

  • The first 15 minutes we bake under a hood at a temperature of 240 degrees. Remove the cap, lower the temperature to 180 degrees.
  • We bake until ready.
  • I have a total baking time of 30 minutes.

About the water in this bread. It may require more or less. It all depends on your flour and the juiciness of the zucchini. I bake it for the fourth time. I couldn't balance the foods the way I wanted them to. For my taste now, what you need. Fantasy bread. Recommend!
