Thyme sprigs 5 pieces
Celery stalks 3 pcs
Champignon 200 g
Lemon 1 PC
Olive oil 3 tbsp. l.

Garlic 2 heads
Balsamic vinegar dark 100 ml

Cooking method

  • Pour balsamic vinegar into a saucepan, put on low heat and cook until the vinegar is half boiled down, acquiring the consistency of liquid honey. About 10-15 minutes.
  • Peel onions, peppers, garlic.
  • Leave the garlic cloves, cut the onions into 8 pieces, the pepper slices lengthwise, the celery and lemon in large pieces, leave the champignons whole (if small) or cut into 4 pieces.
  • Peel off the scales, remove the gills and fins with scissors. Make a longitudinal incision on the abdomen and gut the fish through it. Rinse the asp thoroughly inside and outside, dry and rub with salt.
  • Cover a baking sheet with a sheet of parchment. Place the fish on it, cut down. Using a cooking brush, brush the asp on all sides with boiled vinegar. After 5 min. grease the fish with vinegar again. Repeat the procedure every 5 minutes until the vinegar runs out.
  • Put all vegetables and mushrooms in a bowl, season with salt, add olive oil, half thyme and stir. Put on a baking sheet with fish.
  • Sprinkle the fish on top with the remaining thyme.
  • Cover the baking sheet with foil, put in an oven preheated to 200 ° C. Bake for 50 minutes. In 10 minutes. until ready to remove the foil so that the fish is browned.
