Cheese croquettes with grapefruit and olive jam

Ingredients

Grapefruit 1 PC.
Water 100 ml
Sugar 100 g
Cinnamon 0.5 sticks
Carnation 3-4 pcs.
Badian 1 star
Olives (or olives) 150 g (1 can)
Homemade cheese (or Adyghe) 110 g
Sour cream (or cream) 2 tsp
Pistachios or other nuts for sprinkling
Optional for croquettes chili powder, turmeric or curry

Cooking method

  • First, we cook syrup from water, sugar and spices.
  • We release the grapefruit slices from the partitions, fill them with chilled syrup and leave to marinate in a cold place for 8-12 hours.
  • Next, pour out 100 ml of jam syrup. We take the olives out of the brine, rinse with cold water, free them from the seeds (if any) and grind. You can use a blender, I made it with a knife. Next, pour the olives into a small saucepan, pour in the syrup and cook over low heat for 30 minutes until they are soaked in syrup.
  • For croquettes, grind the cheese with a little sour cream or heavy cream, season with salt and pepper to taste. Form round or oval croquettes from the mass, roll them in finely chopped nuts or salt cracker crumbs.
  • Arrange grapefruit slices and croquettes for serving on a platter. Put the jam in a separate bowl. Additionally, you can serve dried bread or pieces of tortilla.

  • It is more convenient to eat with a fork and in order. First, a piece of grape, then eat with olives, then add some cheese. And so on in a circle.

Note

As for the quantity. Almost everything is laid out on the plate. Only confiture remained in the refrigerator (twice as much). The contents of the dish can be eaten alone, can be together, and can be divided into 8 people. If there are more people, then let the rest help themselves with a look.
I usually boil the syrup from a glass, pour it into a glass jar with spices and put it in the refrigerator. And I advise you the same. It is stored for a long time, does not bother anyone and is always at hand.
A separate word about confiture. What to choose - olives or olives? They are, of course, different, and the result will be different. From olives, the confiture will taste sharper. At first I planned olives, but it didn't work out. I must say that the olives did not disappoint me either. I would even say fascinated.
