Steamed eggplant salad without oil with avocado dressing

Ingredients

Eggplant medium 2 pcs.
Avocado 1 PC.
Small red shallots 1 PC.
Walnuts 4-6 pcs.
Greens (cilantro or mint) taste
Ground black pepper pinch
Lemon juice taste
Sugar pinch
Sour cream (optional) 1-2 tbsp. l.
Garlic 1 small clove

Cooking method

  • Eggplant is a berry! In appearance, of course, he stands out from the general range of varieties familiar to us, but not in his useful qualities. In terms of the amount of vitamins and minerals, this berry is not inferior to many of its summer counterparts. Eggplant is rich in fiber, pectins, vitamins A, B, C, P, natural sugars, tannins and minerals.
  • The recipe was invented by me specifically in order to completely avoid oil, but at the same time maintain the full flavor of the salad. So don't judge strictly.
  • An important point in this recipe is the unconventional steaming of eggplant and the use of avocado instead of oil in the dressing. All this allows you to make the salad light and low-fat. For summer, this method is especially suitable - you don't have to stand at the stove and not fry the eggplants, because everyone knows that this process is slow. I have been using this method for such salads for a long time.
  • Steamed eggplants retain their juiciness, delicate structure and aroma. Everyone knows the quality of eggplants to absorb a huge amount of oil when frying, and then "give it away" in a finished dish. Steaming avoids this and produces a light, low-fat meal that retains its original flavor.
  • Preparation
  • - Wash the eggplants, cut off the tails and cut lengthwise into 4-6 pieces, then across. You will get medium sized pieces.
  • - If the eggplant is bitter, then the pieces should be slightly salted, mixed, allowed to stand for 10 minutes and rinsed with water, squeezing lightly. My eggplants were sweet, did not require this procedure.
  • - Put the pieces of eggplant in a double boiler and steam for about 20-25 minutes until soft. But make sure that the pulp does not fall apart. I cooked in a colander set over a saucepan of boiling water and covered with a sized lid. This makes it easier for me to control the degree of readiness of vegetables. Especially when you are too lazy to take out a double boiler for a small amount.
  • Ready eggplants, if they are not salted, lightly salt and cool,
  • - Make a dressing: chop the pulp of a ripe avocado, half an onion, garlic, nuts, salt, pepper, lemon juice or wine vinegar until puree.
  • Once I added sour cream, it also turned out deliciously. If you want to make it spicy, add some more red hot pepper.

Eggplant is a negative calorie product, that is, it takes more calories to digest than it brings into the body. At the same time, its calorie content is very low - 28 kcal, if, of course, it should not be fried in oil.
