Wagashi uiro - the art of Japanese cooking

Rice flour 180 g
Powdered sugar 45-50 gr.

Warm water 120 g
Filling: garden strawberry, chocolate, cherry without juice
For serving: mint sauce, strawberry coolie

Cooking method

  • My wagashi will certainly be more modest, but also delicious. I recommend making them very small - no more than 1/2 a matchbox.
  • Knead the dough from flour, powder, starch and water.
  • It turns out to be elastic and elastic.
  • I let him lie on the table for a while in a bag.

  • balls and flat cakes.

  • I took different fillings - berries and chocolate. Steam for no more than 15-20-30 minutes, depending on the strength of the steam and the size of the wagashi.
  • Serve with any sweet sauce, as wagashi doesn't taste very sweet. I served the portion with mint sauce cooked over this recipe.
  • Strawberry Coolie Piece: Strawberries, ground with powdered sugar.

Note

Now a little from the internet:
Wagashi (和 菓子?) Are traditional Japanese sweets. Natural products are used in their creation: legumes (mainly red beans - adzuki), rice, various types of sweet potatoes, agar-agar (vegetable gelatin), chestnuts, various herbs and teas.
Wagashi are less sweet than sweets familiar to Europeans. They may even seem quite savory to people who are not used to them.
There are a huge number of varieties of wagashi. Their making was so fond of in Japan that
has become the most attractive piece in the art of Japanese cooking. And this is, first of all, because each cake is made by hand using the fingertips of the skilled hands of the master and a piece of the soul that he puts into his creation. A person has five senses - sight, taste, touch, smell and hearing. With these five senses we live and experience the world. When we look, we see beauty. When we taste it, we get a taste. Taking it in our hands, touching the tip of our tongue, we savor. We touch these three senses when we eat ordinary food, but wagashi is an art. How are the remaining two feelings manifested? The smell of wagashi is the smell of nature. All plants smell differently - rice, beans, mint and ginger, and the incomparable scent of green tea, familiar to every Japanese since childhood. It is the scent of nature that we breathe, bringing wagashi to our lips. The crunch of a ripe juicy apple is pleasant to us. Hearing it, we involuntarily feel its taste in our mouth. But wagashi delights our ears with its names. For example, in some confectionery shops wagashi in the form of yellow maple leaves is called "Dragon Field" (there is an old Japanese song about a field, about yellow maple leaves getting wet in the rain).
Japan is a country that is very careful about its history and traditions. And the history of Wagashi is as old as Japan itself. In order to preserve the traditions of making native Japanese sweets, Wagashi Day was established in 1979, which is celebrated on June 16.

The history of this holiday dates back to the Heian era. In 848, Japan was seized by an epidemic, and once on June 16, the emperor, having collected 16 different sweets, sacrificed them to the gods, praying for the bestowal of health on his country.

Since then, on this holiday, it has been customary to treat friends and loved ones to 16 different types of wagashi and pray for health and family well-being.
There are many varieties of Wagashi.I cooked one of them - uiro. The fillings, the composition of the wagashi dough are very different, but one thing is always the same - they are steamed, they are always a dessert for the unchanging tea ceremony!

Thank you very much Bishka for your attention to the recipe. but they look like rice dumplings! One to one. I would honestly cook them, contrary to all traditions, because they are rather dry. And sweetness is not enough for me - because the sauce flowed like a river. Husband

well, no respect for traditions, will not come out of it worthwhile Sonkei chōrō

just ate with sour cream. The children used to pick out all the sweets (by the way, they grit their teeth), licked the sauce and ate one thing at a time for fun. As always, I didn't get it, except for the first try.

Oh, I don't promise exactly yet, because there are a lot of other ideas. But I will definitely repeat these already in Russian traditions.

cant Helen, cant. She sculpted and photographed herself, apparently she pressed the wrong button - photo bye .. bye .. no ty. But the molding is easy - you put the circles one on one, slightly shifting, then fold them up with a loose tube. You cut it in half. Carefully, gently you open the petals. The edges were smeared with cherry juice.
I'll try to find a sample in the net.
Tumanchik
Something like that. I cut out the circles with a glass. The glass is large. Better to take 3-4 circles.

Yes, overlap. I found a photo in the net. The current is very tight here. I put it away. Roll up and cut in half. Two roses are obtained. Fasten one side for stability. And the other is beautiful to reveal.
