Pomegranate salad in cabbage

Ingredients

Garnet 1 PC.
Couscous 0.5 stack
Pistachios 0.5 stack
Mint 4 leaves
Green onions (optional) 2 feathers
Walnut oil 1 tbsp. l.
Lemon juice 1 tbsp. l.
Salt pepper taste

Cooking method

  • Brew couscous with boiling water according to the instructions. While it is saturated with moisture, peel and lightly fry the pistachios and free the pomegranate seeds from the "captivity". We have been able to do this for a long time - cut the pomegranate peel along the "equator", divide the halves and, turning them over the bowl, tap on all sides with a heavy spoon. Combine ready-made couscous with pomegranate, pistachios, finely chopped mint and green onions, season with oil, lemon juice, spices and put the salad in a bowl of red cabbage. We decorate as desired and - voila! We ask for the table!

Pomegranates are fruits of a pomegranate tree up to 10 m high with shiny leathery narrow-lanceolate leaves and purple flowers. Rounded, apple-sized, reddish or yellowish berries with a leathery pericarp; the seeds are angular, juicy, purple, sweet and sour.

Homeland - North Africa; grown in many subtropical countries; in the former USSR, the main plantings are concentrated in Azerbaijan, Armenia, Georgia, Crimea, Central Asia, where the pomegranate tree is also found in the wild. Pomegranates contain up to 11.8% sugars (fructose and glucose), up to 1.9% organic acids (mainly citric acid), B vitamins, up to 4 mg% vitamin C, tannin.

Fruits of different varieties differ in taste - from bland and very sweet to strongly sour.

Pomegranates are eaten fresh, juices, soft drinks, fruit and berry wines, extracts, syrups are prepared from them. Pomegranate juice is a valuable food and dietary product, it is consumed in natural, raw or canned (granadine) form, jelly, mousse is prepared from it, confectionery and ice cream are tinted with it. The pleasant sweet-sour taste of the juice is not only refreshing, but also stimulates the appetite, promotes better absorption of food. Boiled (condensed) pomegranate juice is a seasoning for oriental fried meat and fish dishes, as well as for poultry dishes. In the Caucasus, pomegranates are also used to prepare a delicious seasoning for meat dishes.

Pomegranates are removed from the second half of September to November (a pomegranate plucked unripe can no longer become completely edible); they can be stored for 4-5 (sweet varieties) or up to 8-9 (sour varieties) months; best around 1 ° C.

The best varieties: Azerbaijani Gulosha, Pink Gulosha, Achikdona, Kazake-anar.
