Cold beetroot to help your heart

Cold beetroot to help your heart

Ingredients

Potatoes 4 things.
Beet 1 pc. (250 g)
Dried apricots 8 pcs.
Parsley
Salt pepper taste

Cooking method

  • Oh, this one terrible heat!
  • It is clear that no matter how you eat in the heat, you will still sweat. Increased sweating threatens the loss of potassium. But potassium is necessary for the normal functioning of cells, for the regulation of blood pressure and heart rate. To get out of the situation, you need to lean on foods rich in potassium. When preparing food from these products, you should not pour out the broth, because a large part of the potassium passes into it.
  • Based on this information, I have compiled a lunch menu "help your heart".
  • Many fruits and vegetables contain potassium. Among them, for example, beets, potatoes, parsley. Rich in potassium and apricots. When fresh fruits are gone, you can switch to dried apricots.
  • So, firstly - cold beetroot with apricots.
  • Cut the peeled potatoes into large cubes and boil in salted water. Cool without draining the broth.
  • Cook the unpeeled beets separately. Cool the finished beets, peel and grate.
  • To serve, put the potatoes in plates, add the beets to the broth, season it to taste, stir and pour over the potatoes. Add chopped fresh apricots and parsley to each serving.
  • If we use dried apricots, then they must first be steamed in hot potato broth, then added to the soup along with the infusion.

The dish is designed for

Serves 4

Note

Of course, the soup will be "rich" if you take ripe potatoes and beets, but at the peak of the hot season, as a rule, there are none. This means we will have fun eating young vegetables.
I'll tell you a little secret: I like this soup with prunes more. This is also quite useful.

Olya, what an unusually delicate combination! And the color just beckons. Thank you very much I would also add mozzarella or instead of potatoes! I think it will turn out lovely!

Yes, a white accent is asked for color, but for taste everything is enough and so.
The main thing is simple (you don't have to fly around the kitchen).
