Asian style spicy eggplant with mint and garlic

Ingredients

Large eggplants 2 pcs
Garlic 3 small prongs
Sprigs of mint 3-4 pcs.
Green onion feather 2-3 pcs.
Chili peppers without seeds 1/3 pcs. or to taste
Soy sauce 3 tbsp. l.
Lemon juice 1 tsp
Sesame oil (dark) 1 tbsp. l.
Unrefined peanut butter 2 tbsp. l.
Sea salt taste
Freshly ground black pepper taste
Sesame seeds slightly fried 2 tsp
Sugar a couple of pinches

Cooking method

  • Eggplant is a berry! In appearance, of course, it stands out from the general range of varieties familiar to us, but not in terms of its useful qualities. In terms of the amount of vitamins and minerals, this berry is not inferior to many of its summer counterparts. Eggplant is rich in fiber, pectins, vitamins A, B, C, P, natural sugars, tannins and minerals.
  • Eggplant is unique in that it goes well with many other foods.
  • In this recipe, mint smoothed out the straightness of the garlic, harmonized the pungency and gave a sense of freshness to the salad, which used heavy artillery of fairly dense and rich vegetable oils common in Asian cuisine. Although, of course, you can replace them with any others of your choice. I even tried it with roasted pumpkin seed pumpkin seed oil.
  • An important point in this recipe is the unconventional steaming of eggplant, which allows you to make this dish light and low-fat. This is especially suitable for summer, you do not need to stand at the stove and not fry the eggplants, because everyone knows that this process is slow. ... I have been using this method for such salads for a long time. Steamed eggplants retain their juiciness, delicate structure and aroma. Everyone knows the quality of eggplants to absorb a huge amount of oil during frying, and then "give it away" in the finished dish. Steaming avoids this and produces a light, low-fat dish that retains its original flavor.
  • Preparation
  • - Wash the eggplants, cut off the tails and cut lengthwise into 4-6 pieces, then across. You will get medium sized pieces.
  • - If the eggplant is bitter, then the pieces should be slightly salt, mix, let stand for 10 minutes and rinse with water, squeezing lightly. My eggplants were sweet, did not require this procedure.
  • - Put pieces of eggplant in a double boiler and steam for about 20-25 minutes until soft. But make sure that the pulp does not fall apart. I cooked in a colander set over a saucepan of boiling water and covered with a sized lid. This makes it easier for me to control the degree of readiness of vegetables. Especially when you are too lazy to take out a double boiler for the sake of a small amount.
  • Ready eggplants, if they are not salted, lightly salt and cool,
  • - Finely chop the green onion.
  • - Chop the mint not very finely.
  • - Free the hot pepper from seeds and cut into rings. Crush the garlic with a knife and then chop finely.
  • - Mix all the ingredients in a bowl and pour the cooled eggplant with this dressing. Mix well, put in the refrigerator and let it brew.
  • - Before serving, check for salt and acid, pepper. Decorate with mint.
  • - Fry the sesame seeds over low heat for just a minute until the color begins to change, and sprinkle them on the snack.
