Gazpacho made from tomatoes, peppers and mango

Ingredients

Large and sweet tomatoes 3 pcs.
Ripe mango 2 pcs.
Cucumber 0.5-1 pcs.
Small sweet red onion 1 PC.
Garlic 1-2 prongs
Apple cider or grape vinegar taste
Salt taste
Olive oil 2 tbsp. l.
Bread crumbs (white bread) optional 2 tbsp. l.
Ground pepper taste
For supplements:
Cucumbers, red peppers, croutons and fried almonds taste
Mineral water or tomato juice for density to taste
Tabasco (optional)

Cooking method

  • Gazpacho is a Spanish cold tomato soup with slices of bread, pepper, garlic, olive oil, cucumbers, onions, lemon juice, salt, spices and vinegar. The recipe for this ancient healthy and truly refreshing soup has long crossed the borders of Spain and has become especially popular in Portugal, southern France, the USA, Mexico, Latin and South America.
  • But initially gazpacho resembled a Russian stew - turyu and was prepared only from bread, olive oil and vinegar. This is how this soup was known during the Roman Empire.
  • For the first time, adding overripe vegetables was invented in Andalusia long before Columbus's travels to America. There was no talk of tomatoes, and the soup itself turned out to be a nondescript greenish color.
  • You can, of course, be surprised, but tomatoes appeared in gazpacho only in the 19th century and they did not want to recognize the newfangled tomato gazpacho for a long time, actively resisting innovation and continuing to prepare the traditional version with bread crumb, vegetables, olive oil and vinegar. Moreover, in cookbooks under the same name, a stew with vegetables recipe existed and more often than a cold soup.
  • The name of this Spanish dish is based on the play on several verbs for tearing, soaking and grinding. And although the Spaniards still argue about the origin of the name, the whole world has long adopted gazpacho as one of the main Spanish culinary recipes.
  • As always happens, the successful way of processing products led to the fact that the dish went beyond the borders of Spain, received international recognition and began its life, mutating beyond recognition. But the principles of making gazpacho are still the same.
  • Gazpacho is prepared only from fresh, well-ripened vegetables or fruits.
  • In gazpacho, it is better to use vegetables without peels and seeds.
  • Bread (stale), if used in gazpacho, is usually soaked beforehand.
  • It is customary to serve gazpacho with vegetables cut into small cubes, which are added at will and to taste on their own. This tradition is strong in southern Spain and Valencia.
  • Gazpacho does not have exact proportions, so in every new place in Spain, you will be offered a new gazpacho, both in taste and in appearance. But I have never met a dark red gazpacho - neither in restaurants, nor in houses at a Spanish dinner.
  • Sweet and sour taste, not boiled, but fresh ingredients and an addition in the form of wine vinegar, olive oil, bread crumbs, garlic allows you to name gazpacho, although often with a stretch, any soup of this kind.
  • I suggest trying gazpacho made from mango, tomato, pepper and cucumber.
  • Preparation

  • You do not need to add crumbs to this version of gazpacho, it already turns out to be thick and saturated.
  • - Tomatoes without peels and seeds, pre-blanched and peeled, onions (peeled) and chopped into large slices, mango pulp without skin and pits, peeled garlic, half a peeled cucumber is sent to a blender. Be sure to pour in olive oil right away - this will preserve a bright color and give tenderness to the consistency of the soup. Grind everything well in mashed potatoes.
  • - Then season to taste: salt, pepper, add tabasco and vinegar to taste.
  • All vegetables are different in taste, so you need to season it at your own discretion.
  • To obtain a more liquid consistency, dilute with tomato juice or water.
  • For speed, you can not blanch the tomatoes and not peel them from seeds, but immediately grind in a blender, but then the whole mixture must be filtered through a sieve.
  • Chill the soup in the refrigerator.
  • To this gazpacho we serve finely chopped skinless cucumbers, diced bell peppers, fried almonds or croutons from your favorite bread. Anything you like! But these additives need to be laid out in segments on a plate so that the guests themselves choose the additives and put the right amount in the gazpacho. We really liked this gazpacho as an addition to roasted almonds.
  • You can cook for two days, even tastier the second.
  • A bottle of good white wine in addition - and all home gourmets will be absolutely happy!
