Mashhurda with homemade stew in a multicooker Steba DD2

Ingredients

Homemade beef stew 350 g
Bulb onions 1 large
Carrot 1 large
Potatoes 1 large
Bell pepper 1 average
Mash 3/4 mstk
Parboiled rice (I have amber) 3/4 mstk
Tomato paste 25% 2-3 st. l.
Vegetable oil 3-4 tbsp. l.
Coarse zira and coriander 0.5 tsp.
Fresh herbs (dill, parsley) half a bunch
Salt-pepper-garlic taste

Cooking method

  • Of course, mashhurda is prepared from fresh meat (beef, lamb), according to your taste. The meat is cut into pieces and fried or stewed, or even just boiled in broth (at the discretion of the chef, so to speak), but thanks to the preparation of homemade stew, which I have laid out in bags in the freezer, the preparation of any dishes is significantly reduced in time. And the stew does not negatively affect the taste of the finished dish, because it is homemade! (in a note I will write how I cook it).
  • So, MashhurdA!
  • I didn't want to bother with the cauldron - the night was outside ... so I decided to quietly cook it in Shtebochka. And given the presence of stew, it turned out not cooking, but purely a song!
  • For soups, I use a stainless steel bowl, in which I also fry.
  • Turn on the Frying mode, pour oil into the bowl and fry the chopped onion until slightly golden brown. Then add the tomato paste and stir it well and fry for another minute. Turn off the frying. I did not fry the carrots, fearing that later, by the end of cooking, they would disappear from the soup altogether.
  • Now fill the fry with boiling water (so that it does not fry further) and lay in: carrots, stew, potatoes (medium cubes), bell peppers, washed mung bean and rice, and of course, cumin and coriander. Add boiling water to the 3 liter mark, close the Shteba and set the Soup mode, pressure - 0.7 - 20 minutes.
  • There is no need to salt in advance, because we need the mung bean boiled, and the potatoes remain intact, we already have salt in the stew. And the whole potato will help us to preserve the acidic environment due to tomato paste. And I used parboiled rice, because ordinary rice will turn into porridge during this time.
  • At the end of cooking, I did not forcibly release the pressure, but waited for a temperature of 95C and released the last steam.
  • All! We just have to add salt to taste, add chopped herbs with a few cloves of garlic crushed into it (optional) and we can eat! Even at night! Especially at night, because then it is always tastier!

You know, it was only when I sat down to eat that I realized what I had done. The fact is that I never add rice to mashhurda, I make it only from mung bean. But I definitely add rice to mashkichiri.
I sat down sincerely ... and I don’t understand whether I eat mashhurda or mastava! Then I realized that rice was to blame.
I highly recommend replacing the rice with a full wave, the soup will only benefit from this. Well, if you don't want to, do it with rice, it finally can be delicious too!

Now about the stew:
I put 2-2.5 kg of meat at once (more often it is inexpensive beef with veins, which I cut into pieces the size of a matchbox or a little thicker). Depending on its hardness, the time is set from 1h10min to 1h30min - Meat mode, pressure 0.7.
The calculation is as follows: for 1 kg of meat - 1 tspa spoonful of salt, 1 small onion (chopped at random, it will still disappear), a pinch of dried garlic, 1 piece of lavrushka, ground black pepper (a pinch). I also really like to add a little dried herbs (dill with parsley), literally a pinch. Mix everything right in a Teflon saucepan, close the lid and turn on the cartoon - FSE!
