Flourless truffle cake (Panasonic multicooker)

Ingredients

Butter 100 g
Chicken egg 3 pcs. large
Bitter chocolate 200 g
Brown sugar 75 g
Starch 1 tbsp. l.
Cocoa powder 1 tbsp. l.
Cognac 1 tbsp. l.
Cinnamon 0.5 tsp

Cooking method

  • Today I want to share a recipe for a simple cake, the so-called truffle cake, baked without flour, but with a lot of chocolate, and in the finished form resembles a large truffle candy. So far, this is the only cake I know that is completely prepared in a multicooker, well, or in an oven - this is both more convenient and familiar.
  • 1.
  • First, we will need to divide the eggs into yolks and whites. Beat the yolks white with sugar, cinnamon and cognac. It is always better to cook this cake with the addition of some kind of strong aromatic alcohol, for example, cognac, dark rum or whiskey, but you can do without this addition, this is not essential. Whisk the whites until they are firm.
  • 2.
  • Bitter chocolate (I use brut chocolate with 78% cocoa) break and melt with diced butter in the microwave for three minutes at 600 watts. Or you can melt the chocolate and butter in a bowl in a water bath, but I prefer the microwave - it's easier, faster and more convenient. I always heat chocolate with butter or cream either in earthenware or glass dishes - it conducts heat most evenly.
  • 3.
  • Stir the chocolate mass and pour it over the yolks, beaten with sugar. Mix both materials thoroughly. Add starch and stir again. In three steps, introduce proteins into the yolk mass, mixing thoroughly from the edges to the center each time.
  • 4.
  • Grease the bowl of the multicooker with oil and lay out the dough. This must be done quickly, immediately after mixing, because the dough for the truffle cake hardens very quickly like a mousse, and is very thickened due to the large amount of chocolate. We will cook the cake, of course, in the "Baking" mode in a multicooker about twenty five to thirty minutes, no more, otherwise it will dry out very much and will not be so tasty. Cool slightly and turn onto a dish. Sprinkle the finished warm truffle cake through a strainer with a mixture of cocoa powder and ground cinnamon and serve warm, with ice cream or whipped heavy cream.

It took just 40-50 minutes for this cake.
I really do not like to beat the yolks and whites separately. Therefore, here, too, I drove eggs with sugar until fluffy foam, added melted chocolate with butter and then starch, so it took even less time to cook :)

I made it! I don't post photos, because I have no jewelry (no cocoa and cinnamon, and strawberries are not yet in season), but it tastes so delicious, it's divine !!! So far I had to make half of the portion, because the chocolate bar allowed for me without any traces was only 1. But as soon as I find a similar chocolate, I will make more. From alcohol I put Massandra port wine and a half tablespoons (I usually put it everywhere where I need to put it, I don't like it stronger). In short, I was bored when I ate.
