Ingredients

Pears 3 pcs.
Orange jam 1 can

Cooking method

  • Wash the pears, cut them in half lengthwise, core them and fill with orange jam.

  • Connect the halves, pack using a vacuum sealer (I have an Ellrona VA22):

  • Place the bag in the bowl of the device for sous vide (I have a Steba DD2 multicooker-pressure cooker) on the wire rack, press it on top with a double boiler.
  • Sous vide pears with orange jam in Steba DD2 multicooker pressure cooker
  • I showed this process here. Set 65 degrees, 4 hours in "Heating" mode. At the end of the process, leave in a multicooker until it cools down, then, without opening the bag, put it in the refrigerator for two hours.
  • Serve as a dessert. It goes very well with dry wine.
