Meat bread "As in the store"

Ingredients

Pork shoulder with cooked meat 1.9 kg.
Fine salt 1.5-2 tsp without slide
Spices (self-melted) 0.5 tsp
Garlic 4-5 teeth
Ice 150 gr.
Powdered milk 2 tbsp. l. with a slide
Egg whites C-0 2 pcs.

Cooking method

  • I like all recipes for meat bread. I generally adore him since childhood. But my offspring, especially the younger one, loves everything that is in store. And sausage, and bread, and sausages ... But that's good, I haven't eaten meat at all before. The meat-eater is just beginning to wake up in him. Well, there can't be a vegetarian in a meat-eater family! Although…
  • But buying in a store: first, more expensive; and secondly, well damn it is insulting!
  • So I started actively looking for a recipe as close as possible to the taste of the store.
  • Many years ago I had a chance to work at a meat processing plant for 5 years.

    Toka has recently started eating half-smoked sausage - she has overeat.

    True, an accountant .. But I know the whole technical process from a cow to a sausage well. The beloved Borshchevskaya Zinaida Andreevna was a technologist-assistant.

    She knew everything about meat. It was she who taught me how to make homemade sausage. So I, having collected all the memories in an armful, having read everything and enlisting the guidance of Angela-ang-kay (the main thing is to intervene well !!!) got down to business.
  • I cook sausages all the time, just by sight. And now I have already begun to somehow systematize the accumulated knowledge - the easiest way.
  • I'll take the base from pickled meat. I already wrote about this technology in the recipe Homemade marinated meat sausage... The bottom line is that the meat is already pickled. I like to do that. I will cook from pork shoulder - the most rewarding meat at an affordable price. I cleaned it, washed it, dried it. The weight at the top is for the ready-to-marinate product. I cut it into large pieces, which then easily go into the meat grinder.

  • I fell asleep with salt (1 tsp) and pepper (0.5 tsp).

  • These salt and spices are the taste of our family. It is not rewarding to give such measures. Therefore, focus on your taste sensations.

  • She covered it with a plate, but with air access and put it in the refrigerator. The meat was ripe for 24 hours. During the day, I stirred it with my hand and, sorry, tasted it with salt. I had to add another teaspoon of salt and some spices. On the day of work, I squeezed garlic to the meat. Mixed well. The meat is a little dry.
  • In the freezer, 15 ice balls, prepared in advance, are waiting for me - each about 10 grams. Thus, 150 gr. ice.
  • There are egg whites in the refrigerator. Slightly mixed, but not whipped.
  • I work with a harvester with a hook attachment.
  • Powdered milk is prepared nearby.
  • Preheat the oven to 220 degrees.
  • We pass the meat through the largest grid of the meat grinder. We put it in the refrigerator. We release the ice from the bag and grind it in a blender to small and large pieces in just a couple of turns of a knife. We put it in the refrigerator.

  • We take out the meat and start the hook. We stir it for a couple of minutes, then unload the ice crumbs and knead for 10 minutes. Then put it in the refrigerator. Let it rest for 5 minutes. Then knead for another 10 minutes with proteins and milk powder. Sticky strings stretch from the minced meat to the hook. Minced meat is ready.
  • We take a suitable shape. Of course a rectangular one is better for a cupcake. But mine was busy at that moment. I had to use a wide one. Lubricate it with non-stick grease. We unload the meat. Now so. If you load the meat with a slide and gently smooth the top with a spatula, without pressing too much, then voids with jelly are formed. The same ones that are always present in store-bought meat bread. One to one like in a store. If you do not want this, then the minced meat should be laid out gradually tamping each layer a little.
  • I did not grease the top, I wanted to bring it closer to the store view and was afraid that the children would not like the additive. Cover with foil. Reduce the temperature to 180 degrees. Bake for 20-30 minutes. Then we remove the foil and check for readiness.

  • Then I baked for another 20 minutes for 220. And then a couple of minutes under the grill. Here's what happened.

  • I am very pleased with the result. The bread is fluffy. After baking and cooling, the whole thing came together, like a bun. The mass is dense and does not fall apart. Well sliced. Jelly voids are ours !!! Children if happy !!!
  • I ate half of it, and I froze the other half due to the heat. It defrosted just in the refrigerator. The taste has not changed.

Nikka dear, of course I remember your trouble! Add starch instead of milk. But not such a dose, or maybe one spoon is enough. Mix well, chilling constantly. Milk (starch) gives stickiness for a uniform texture. The bread does not crumble.
