Ingredients

Whole oats groats 110 g
Slow-cook oatmeal 100 g
Filtered water
Fillers to taste:
sugar, syrup, cocoa, honey, cinnamon, berries

Cooking method

  • Pour cereals into two different containers (I have glass jars). Flakes as they are. But the oats Oat yoghurt and cocktails based on it
  • (I have it in a regular store) we rinse it well with running filtered water according to the principle: what has surfaced is dead.

  • Next, pour both cereals with cold boiling water so that the cereals are covered by 1 cm. Approximately of course. No need to cover. We put it in a warm place.

  • Leave until the liquid is absorbed for about 8 hours. I put it on in the morning and watched the process. As it is absorbed, water can be added so that the cereal is always in the water. Above is not necessary, but simply immersed. The flakes did not bother me, but the cereals "asked" for about 20 ml more.

  • Now we combine both mixtures into one container: I have a glass floor and a liter jar. Grind with an immersion blender (well, or something else) to a very smooth state. True, it didn't work out very smoothly for me. But it doesn't matter. I did this operation late in the evening.
  • The mixture should be creamy and soft. Cover the jar with a lid with holes and leave to ferment in a warm place for 1-2 days. We follow and try the mixture. Be sure to stir it a couple of times during fermentation. You may need to leave it on for a longer time (3-4 days) if you want more acidic yogurt, but in general you need to taste it periodically to find the perfect balance.
  • At first, there will be little signs of fermentation in the milk, but the smell will not be pleasant. After that, signs of fermentation appear - bubbles on the surface, the liquid will stratify, the smell will not be very good.
  • But on the second or third day, bubbles will leave the surface of the oat milk and a pleasant kefir smell will appear. The look may be layered, but the smell is already a little nutty, creamy. Delicious! Since I didn't beat it very well, I worked with a blender again. The oats are already soft and break easily. My seychps is very warm in my apartment, so a wonderful yogurt was ready for 3 days.

  • In general, already at this stage the yogurt is ready! You can drink it just like kefir, or you can make cocktails and smoothies.
  • If you take a small batch of this yogurt and store it in a sealed container in the refrigerator, then you will have a great starter for a new batch. Now you need much less time to make new yogurt. It is necessary to perform all the manipulations with cereals again, but add a starter to the crushed mixture. The new yogurt will be ready very quickly. Store leftover yogurt in the refrigerator for up to 3 days.

  • Put berries (I have red currants), sugar (or honey) in a blender glass, pour out yogurt and beat with a blender until smooth. Decorate with mint and serve! Delicious!

  • For a chocolate cocktail, mix yoghurt, cocoa and sugar. Beat until smooth and sugar dissolves.
