White gazpacho

Ingredients

cauliflower 300 g
dried white bread 2 pieces
Pine nuts 30 g
almonds (chopped and toasted) 50 g
shallot 1 PC
cucumber (small) 1 PC
garlic 1 clove
olive oil 2 tbsp. l
sherry vinegar 2 tbsp. l
salt pepper
water

Cooking method

  • Boil cauliflower.
  • Drain off water, rinse under cold water and cool.
  • In a blender, add 2 cups of cold water, all recipes, and blend until smooth.
  • If it's very thick, add more water to thin the gazpacho.
  • Season the soup with salt and pepper and chill for about 1 hour.
  • When serving, add diced cucumbers and toasted almonds to each plate.
  • White gazpacho
