Ingredients

tomatoes or tomato juice 1 kg or 1 liter
bread 200 g
bulb 1 PC
boiled eggs 2 pcs
sausage 100 g
garlic 3 teeth
olive oil 4 tbsp
apple cider vinegar or balsamic 1 tbsp

Cooking method

  • Salmorejo is the national dish of Spain. A thick, cold Andalusian Cordoba puree soup made with tomatoes, bread, garlic and olive oil. But in different regions of Spain, some more ingredients are added to it: hot peppers, onions, paprika. Salmorejo is used as a soup, as a dipping sauce, and as a marinade for flavoring meat.
  • SalmorejoGrind the bread, onion, tomatoes and garlic in a blender until smooth.
    SalmorejoAdd salt, oil and vinegar.
    SalmorejoAdd boiled eggs, sausage and ice cubes. If the soup is very thick, you can add water.
