Delicious eggplant pie

Ingredients

Dough
Flour 2 tbsp. 250 ml each. (maybe a little more will be needed)
baking powder 1/2 sachet
salt 1/2 tsp
softened butter 100 g
egg 2 pcs.
sour cream 3 tbsp. l.
Filling
eggplant 3 pcs. (large)
salt 1 tsp
rast. oil for frying
garlic 4-8 slices (to taste)
feta cheese (medium salted) 50-60 g.
tomato 2 pcs.
mayonnaise optional
cheese 200 BC

Cooking method

  • Well, sooooo delicious pie! Eggplant filling is somewhat reminiscent of mushrooms. I've been baking it for several years (my husband's favorite cake). Thank you for this Delize recipe from the friendly forum.
  • The pie is very satisfying, but despite this it “flies away” with great speed!)))
  • To make the dough, we need flour. Add baking powder and salt, mix everything.
  • Put softened butter in flour. We chop the butter with improvised means (who are accustomed to what), until the whole mass turns into butter-flour crumbs.
  • Add eggs and sour cream. We mix everything.
  • The result should be a soft, pleasant dough. We try to knead it as soon as possible. Cover with a lid and place in the refrigerator.
  • Now let's get down to stuffing. Take 3 large eggplants (the pie is big!). We clean from the skin. We cut them into cubes (I cut 1.5 * 1.5 cm somewhere). Salt the eggplants for about 1 hour. a spoonful of salt and mix. We leave for some time to extract juice, along with which the bitterness characteristic of eggplant will stand out. When the eggplants start juicing, we squeeze them well in a carousel to dry the herbs (you can squeeze well with your hands so that there is no excess water).
  • Preheat a saucepan (large frying pan) and stew the eggplant with a small amount of vegetable oil.
  • Stir the eggplants periodically. Average fire.
  • While the eggplant is stewing, peel a few cloves of garlic
  • Rub the cheese through a fine grater.
  • We also rub the cheese through a medium grater.
  • Do not forget to stir occasionally while the eggplants are in a saucepan.
  • We transfer the stewed eggplants from the stewpan to another dish - this way they cool faster!
  • Add grated cheese, chopped garlic to the cooled eggplants, mix, add cheese (leave a little) and also mix.
  • Here's a minced meat! We taste it for salt. Bryndza and cheese contain salt, this must be taken into account! You don't need the minced meat to be salty!
  • Now we take a couple of tomatoes and cut them into slices, having previously cut out the places of contact with the stalk.
  • We take out the dough from the refrigerator, pour cold water over the silicone mold (I have a "Princess") and place the dough in the mold
  • Knead the dough with our hands, distribute it along the bottom of the silicone mold and form the sides
  • We spread the minced meat, and on top of it - chopped tomatoes. I spread the tomatoes in a circle in a fan. It turns out beautifully.
  • Sprinkle a little mayonnaise on top
  • The cake is ready for baking! We send it to an oven preheated to 200 degrees and after 10 minutes we reduce the temperature to 170-180 degrees.
  • It is baked for about 30-40 minutes (depends on the oven). We will determine the readiness visually: the dough is baked and became golden brown, and the cake is also covered with a golden crust.
  • Sprinkle the cake lightly with the remaining cheese and bake for another 5-7 minutes - so that the cheese melts and slightly browns.
  • Here is our great cake and ready!
  • Indescribable taste! The cake should be allowed to stand and cool down a little ... If you try to take it out while hot, it can fall apart, since we have a lot of filling and it is quite heavy ....

And we eat dried ones all winter, soak them for a few minutes and cook, whatever I want. Such eggplants behave beautifully in all dishes, we like them.
