Ingredients

Milfeuille dough:
Flour / s 70 gr. + How much it will take
Butter 72.5% 50 gr.
Sugar 50 gr.
Vanillin
Egg C-2 1 PC.
For lemon curd:
Lemon juice 125 gr.
Granulated sugar 100 g
Chicken egg С-0 4 pcs + more if needed
Butter 85 gr.
Salt pinch
Ripe mango for serving ½ pcs.

Cooking method

  • Cooking the dough with milfeuille:
  • In general, the process is identical to the preparation of craquelin in the recipe. Shu cakes with custard and berry cream... There is a master class there.
  • Knead the dough quickly until a dense bun. Add flour if necessary. I demanded 3 tbsp. l. with a slide. Put the dough on a sheet of baking paper. Cover with the same paper and roll out into a layer 1-2 mm thick. Transfer to a baking sheet or cutting board.
  • Put in the freezer for 10 minutes. Then remove.
  • Using scissors and paper, cut into rectangles the size of a serving dish.
  • Remove on a baking sheet and refrigerate until completely frozen.
  • It can be stored for months. We take it out when needed and prepare it. Very comfortably.
  • Cooking lemon curd:
  • To squeeze the juice out of the lemon as best as possible, it must be frozen. Then defrost. The juice is squeezed out easily and as cleanly as possible. It is better to do this in a cup through a sieve, cutting the fruit in half and chipping the pulp a little, so that the pieces and grains will not get into the juice. You can then, in order to save money, spill cake with water 15-20 grams.
  • We put one additional egg next to it, just in case.
  • In a thick-walled ladle, we begin to melt the butter with sugar and salt. We do not overheat much. Some of it has already melted, and some more pieces. Mix all eggs and lemon juice separately. Putting it all together.

  • And knead well with a spatula. We increase the fire as far as the hand can hold the ladle. Heat intensively and grind. We continue until the mass is completely thickened for about 2-3 minutes. It didn't get thick for me for a long time. I then quickly broke another egg in a glass, stirred it and poured it into a ladle - it went right away. When the mass is already thick, we pass it through a sieve without cooling it, grinding it well. The remaining particles are delicious!
