Cooking method

  • Dogva is a delicious Azerbaijani dish. It is perfect for a sultry hot day.
  • DovgaYou can take different greens, which you like, but there must be mint. We take a lot of greenery. I took mint, sorrel, parsley and dill. Cut the greens as small as possible.
    DovgaBeat the egg with flour separately, you can add a little water.
    DovgaBoil the rice in advance.
  • DovgaPour kefir into a saucepan, according to recipes with a thick bottom, but I did it in a simple enamel one. Add the egg mixture and mix everything well and put on fire.
    DovgaWe interfere constantly, do not leave the dovga. And use only a wooden spatula. Otherwise, kefir will peel off. Add rice when the kefir is hot. I tried to film the boiling process. Nothing peeled off.
    DovgaAs soon as the soup has boiled, immediately add all the greens and turn off. We are waiting for it to cool down. Salt already cold dovga.
  • You can also add boiled chickpeas and meatballs to dovga, if desired and for the necessary satiety.

Note

The same dish is found in Armenian cuisine, it is called SPAS (Tanapur).
Tan is matsun (curdled milk, yogurt) diluted with water. Apur means "Soup" in Armenian.
Only instead of rice, grains of small wheat (dzavar). And they also add fried onions in butter.
