Stolovsky fresh cabbage salad

Ingredients

Fresh cabbage (if young - generally fine, you can take a little more) 650gr
green onion 120gr
carrot 100gr
sugar 20gr
vinegar 2% 100gr
vegetable oil (I love fragrant) 50gr
salt (taken at the rate of 15g per 1 kg of cabbage, I counted) 10gr

Cooking method

  • Remember this one? Sweet and sour, tasty, fresh ... Insanely simple, but never worked out for me. That's not all. The husband adored him, but there was no one to even ask how to do it normally. Just how I didn't divorce such a crooked wife - and I don't know!))).
  • So, I was extremely surprised that it really has more in appearance and taste of green onions than there was in the table salad. Either they stole and saved, infections, or they changed something in later collections))). I have a collection of Soviet canteens from 1968 (almost invariably reproduces the same previous collection of 1955. They were approved and published centrally - the Ministry of Trade and the salad had to look as it says there!)) In all Soviet canteens of the entire Soviet Union!
  • So...
  • Chop the cabbage, add sugar, salt and grind it (shake it with your hands to make it "soft"). Since 1968 technological instructions instructed the cabbage to be heated with continuous stirring in the presence of salt, sugar and vinegar until it settled. Not to a boil, of course, but just to soften, but preserve crispness. However, these are Stolovsky quirks for the sake of preserving a greater mass of the product, and when grinding, as you know, a lot of juice is released, which reduces the output of the finished dish. But we are not afraid, right? Therefore, we will do as we did in the 50s: grind! So, grind, then add chopped green onions, carrots grated on a coarse grater, vinegar and oil. Stir and ... burst faster until voracious relatives take it away!)))
  • Vinegar ... Of course, don't be bullshit and look for the mythical 2% vinegar on sale. Just make it from what you have in stock. For example, you have 6% vinegar. To obtain 2%, it must be diluted 3 times. That is, take, say, 30 ml of vinegar and add water to a volume of 90 ml.

Note

There is also a version of this salad with a fresh apple. Who needs it, come, do not crowd, reach out, I will rewrite the proportions from the book.
