Cold creamy parsley and fennel soup with mushrooms

Ingredients

Raw potatoes (preferably young), peeled 70 gr.
Stalked celery 35 gr.
Sweet and sour apple 50 gr.
Fresh fennel 70 gr.
Butter 15 gr.
Olive oil 2 tbsp. l.
Parsley (greens without stems) 40 gr.
Spinach 25 gr.
Salt to taste
Freshly ground black pepper to taste
Leek 25 gr.
Champignon 3 pcs.
Marinade for mushrooms:
Olive oil 1 tbsp. l.
Spice
Soy sauce 1 tbsp. l.
Lemon juice 1 tbsp. l.
Thick yogurt to taste
Vegetable broth by density

Cooking method

  • Vegetable broth we have here on this recipe.
  • Marinate the champignons in a mixture of lemon juice, salt and spices. Bake on a grill or oven (slow cooker).
  • Wash, peel and chop in medium cubes: potatoes, celery, apple, fennel, leek. In a frying pan with high sides, melt the oils and simmer the vegetables over low heat until half cooked. Approximately 10 minutes after good warming up. Divide the parsley into 2 parts. Add one part to the pan. Season with salt, pepper and pour boiling water so that the water covers the vegetables. Bring to a boil, reduce heat and cover. Boil for another 15-20 minutes under the lid until vegetables are fully cooked.
  • Spinach and leftover parsley, leaving a few twigs for decoration, chop in a pan. Bring to a boil and turn off. Pour immediately into a container and, placing in an ICE bath, grind with an immersion blender. The water is constantly being changed to even colder. All these movements are done so that the soup has a magnificent juicy green color. Next, grind the soup through a sieve until a velvety delicate structure and uniformity. Dilute with broth if necessary.
  • Serve with a drop of thick homemade yogurt and grilled mushrooms.
