Cooking method

  • Grind the liver, bacon, onion and carrots in a meat grinder. Add salt, pepper, soda and flour. Knead the minced meat like pancakes.

  • In the pressure cooker, select the FRYING mode - Pressure 3 - 30 minutes. Add a little vegetable oil and when the saucepan gets hot, spread our cutlets with a spoon. Cover with a lid (valve is open). Fry for 2 minutes on the first side.

  • Then turn over and fry the same amount on the second side. But we do not cover it with a lid.

  • It took me a little less than 30 minutes to make all the cutlets. We can stop there. As you like.

  • But I put everything in a saucepan and poured sour cream (you can overcook the onion with sour cream and pour this sauce). I put it on the EXTINGUISHING mode - Pressure 2 - 20 minutes.
  • The result is the cutlets "with snow". But very juicy, juicy inside, airy and soft.

inka_kot, thanks for the recipe - it turned out great! I really love the liver, and I tried all kinds of cutlets - and with semolina, with ground oatmeal, with sour cream. And it seems not bad, but ... not that! And these are just right! Fried in one pan, in another on a pillow of onions, stewed in sour cream, folded it and then warmed it up for another 10 minutes.
I will not look for other options for this dish.

I used the recipe again. Such deliciousness! Sal was not there. "Cleansing" the meat grinder, I played a piece of homemade white bread.
Then everything is according to the recipe. Delicate, delicious!

I made these cutlets again, replacing carrots and onions with Chinese cabbage (lowering the GI). A very good replacement! Cabbage does not feel at all, but tenderness and softness are present. She did it in Prinzeska, then just put it in a glass saucepan. Then she did not begin to warm up anything additionally, everything was ready and tender.

Ekaterina2, I think that cabbage is an ideal ingredient in any cutlets / meatballs. It gives juiciness. And its taste is not felt at all. I do so often myself!
